- 1-1/4 c water
- 3/4 c all-purpose flour
- 1/2 c cake flour
- 1 tsp baking soda
- 3 tbsp ancho chili powder
- 1/4 tsp ground cayenne pepper
- 1/4 tsp salt
- 16 tbsp unsalted butter
- 3/4 c Splenda for Baking
- 4 eggs
- 1/2 c sour cream
- 1 tsp vanilla
- 1-1/2 c heavy cream
- 4 tbsp unsalted butter
- 2 tbsp ancho chili powder
- 1/8 tsp ground cayenne pepper
- 12 oz semisweet chocolate, roughly chopped

%3C/p%3E%3Cp%3EJanuary%2015,%202008,%2010:57%20pm:%20I%20hit%20the%20%E2%80%98publish%E2%80%99%20button%20and%20things%20were%20off.%20I%20was%20in%20a%20bad%20relationship,%20highly%20depressed,%20completely%20bored%20with%20my%20day-to-day%20life%20and%20thinking%20that%20things%20were%20never%20going%20to%20look%20up.%20But%20after%20talking%20to%20a%20few%20foodies%20(now%20friends)%20on%20the%20Nest%E2%80%99s%20%E2%80%98What%E2%80%99s%20Cooking%E2%80%99%20page,%20I%20decided%20to%20start%20a%20food%20blog.%20I%20could%20find%20my%20way%20around%20a%20kitchen,%20but%20was%20never%20really%20that%20enthused%20about%20spending%20several%20hours%20in%20there.%20Imagine%20my%20surprise,%20two%20years%20later,%20to%20find%20that%20it%E2%80%99s%20all%20I%20can%20think%20about.%20Yes,%20I%20am%20a%20full-fledged%20%E2%80%98food%20snob%E2%80%99%E2%80%A6%20and%20I%20embrace%20it!%20I%20get%20excited%20about%20grocery%20stores,%20cupcake%20liners,%20spices,%20new%20cookbooks,%20dishes,%20tools%20and%20of%20course,%20recipes.%3C/p%3E%3Cp%3EThese%20past%20two%20years%20have%20made%20me%20a%20better%20person.%20I%E2%80%99m%20not%20only%20in%20a%20new%20(and%20perfectly%20wonderful)%20relationship,%20but%20I%E2%80%99m%20happy.%20I%E2%80%99ve%20done%20things%20I%20never%20thought%20I%E2%80%99d%20ever%20do%20and%20I%20have%20a%20handful%20of%20foodie%20friends%20that%20I%20absolutely%20love.%20And%20hopefully,%20year%20three%20will%20bring%20more%20crazy%20and%20exciting%20things%20for%20%E2%80%98My%20Baking%20Heart%E2%80%99.%20Thank%20you%20for%20sticking%20around%20and%20continuing%20to%20read%20it!!%3C/p%3E%3Cp%3ENow%E2%80%A6%20on%20to%20this%20month%E2%80%99s%20Iron%20Cupcake:%20Earth%20entry!%20Since%20it%20is%20MBH%E2%80%99s%20birthday,%20I%20decided%20to%20post%20earlier%20than%20normal.%20The%20theme%20for%20January%20is%20%E2%80%9CWinter%20Warm-Up%E2%80%9D%E2%80%A6%20based%20on%20or%20inspired%20by%20anything%20that%20warms%20us%20up%20during%20the%20cold%20months.%20Spicy%20foods%20always%20warm%20me%20up,%20no%20matter%20what%20time%20of%20year%20it%20is,%20so%20I%20went%20with%20that%20and%20made%20these%20hot%20little%20tamales%E2%80%A6%3C/p%3E%3Cp%3EChocolate%20Chile%20Cupcakes%20with%20Spicy%20Chocolate%20Ganache%20Frosting%3C/p%3E%3Cp%3ECupcakes:%3C/p%3E%3Cp%3ECombine%20chopped%20chocolate%20and%20cocoa%20powder%20in%20a%20medium-sized%20bowl,%20then%20set%20aside.%20Boil%20water%20in%20a%20kettle,%20then%20measure%20out%201-1/4%20cups.%20Pour%20the%20water%20over%20the%20chocolate/cocoa%20mixture,%20then%20whisk%20until%20smooth.%20Sift%20flours,%20baking%20soda,%20chili%20powder,%20cayenne%20pepper%20and%20salt%20into%20a%20bowl%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20standing%20mixer,%20beat%20butter%20until%20creamy.%20Add%20the%20Splenda%20and%20beat%20until%20fluffy,%20about%203%20minutes.%20Add%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20one.%20Add%20sour%20cream%20and%20vanilla%20and%20beat%20until%20combined.%20Add%20about%20a%201/3%20of%20the%20flour%20mixture,%20beating%20just%20until%20the%20flour%20starts%20to%20incorporate,%20then%20add%20about%201/2%20of%20the%20chocolate%20mixture,%20beating%20just%20until%20this%20starts%20to%20incorporate,%20as%20well.%20Alternate%20between%20the%20flour%20and%20chocolate%20until%20all%20is%20added,%20but%20DO%20NOT%20overbeat.%3C/p%3E%3Cp%3EUsing%20a%20cookie%20scoop,%20transfer%20the%20batter%20into%20liners%20until%20each%20is%20about%203/4%20full.%20Bake%20for%2015-18%20minutes,%20or%20until%20a%20toothpick%20comes%20out%20clean.%20Leave%20cupcakes%20in%20pan%20for%205%20minutes,%20then%20transfer%20to%20a%20wire%20rack.%20Cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3EFrosting:%3C/p%3E%3Cp%3E1-1/2%20c%20heavy%20cream%3C/p%3E%3Cp%3E4%20tbsp%20unsalted%20butter%3C/p%3E%3Cp%3E2%20tbsp%20ancho%20chili%20powder%3C/p%3E%3Cp%3E1/8%20tsp%20ground%20cayenne%20pepper%3C/p%3E%3Cp%3E12%20oz%20semisweet%20chocolate,%20roughly%20chopped%3C/p%3E%3Cp%3EPlace%20chili%20powder,%20cayenne%20pepper%20and%20chocolate%20in%20a%20medium-sized%20bowl%20and%20set%20aside.%20In%20a%20medium%20heavyweight%20pot,%20heat%20the%20cream%20and%20butter%20together%20over%20medium%20heat,%20until%20butter%20is%20melted%20and%20cream%20bubbles%20around%20the%20edge%20of%20the%20pot.%20Over%20the%20chocolate%20mixture,%20pour%20the%20heated%20cream%20and%20butter%20and%20let%20sit%20for%20about%2030%20seconds.%20Start%20whisking%20mixture%20until%20smooth.%20Set%20aside,%20but%20stir%20occasionally%20with%20a%20wooden%20spoon.%20It%20should%20reach%20piping%20consistency%20within%20an%20hour%20or%20two.%3C/p%3E%3Cp%3EVoting%20will%20begin%20no%20later%20than%20Tuesday,%20January%2028%20at%208%20pm%20at%20NO%20ONE%20PUTS%20CUPCAKE%20IN%20A%20CORNER,%20and%20will%20be%20open%20through%20Wednesday,%20February%203%20at%2012%20noon.%3C/p%3E%3Cp%3EIron%20Cupcake:%20Earth%20is%20a%20monthly%20challenge%20where%20bakers%20all%20over%20the%20world%20compete,%20
