Receta Hearty Tortellini Vegetable Soup

Ingredientes
- 3 c. mushrooms quartered
- 1 c. Minced onions
- 1 c. Minced carrots
- 1 c. Minced zucchini
- 1 Tbsp. extra virgin olive oil plus
- 1 tsp extra virgin olive oil
- 2 sm garlic cloves chopped
- 4 c. spinach washed and dry
- 3 c. Stewed tomatoes
- 2 c. Chicken broth
- 2 Tbsp. Minced parsley
- 2 Tbsp. fresh dill minced
- 56 x Frzn tortellini (stuffed With ricotta cheese)
Direcciones
- In a 4-qt microwavable casserole combine mushrooms, onions, carrots, zucchini, oil, and garlic and stir to coat. Cover and microwave on HIGH for 6 min, stirring once halfway through cooking.
- Add in remaining ingredients except tortellini and stir to combine. Cover and microwave on HIGH for 6 min, stirring once halfway through cooking.
- Add in tortellini and stir to combine; cover and microwave on Medium for 5 min. Let stand for 5 min, stirring after 3 min, till tortellini are soft.
