- 1/2 pound haricot vertes or green beans
- 2 pounds fresh sushi-quality tuna or
- Italian packed-in-oil canned tuna
- 2 tablespoons extra-virgin olive oil
- Sea salt and freshly ground black pepper
- cherry tomatoes, halved
- 1 cup Nicoise olives

,%20recipes,%20and%20stories%20that%20have%20nothing%20to%20do%20with%20that%20particular%20subject,%20but%20I%20do%20want%20to%20keep%20track%20of%20the%20before,%20during,%20and%20after.%20Certainly%20there's%20room%20on%20boomer%20shelves%20for%20%20a%20future,%20%22Hip%20Replacements%20for%20Dummies%22.%3C/p%3E%3Cp%3ELast%20summer%20I%20noticed%20that%20I%20flinched%20at%20the%20prospect%20of%20a%20long%20walk,%20a%20downtown%20Seattle%20experience,%20or%20trip%20on%20foot%20to%20the%20store.%20By%20this%20winter,%20Costco%20was%20becoming%20larger%20with%20each%20visit%20and%20three%20hours%20of%20gardening%20was%20not%20possible.%20%20I%20could%20no%20longer%20blame%20the%20weather,%20my%20shoes,%20or%20an%20uneven%20sidewalk%20for%20my%20discomfort.%20An%20routine%20trip%20to%20my%20regular%20physician%20and%20an%20innocent%20question%20about%20another%20hip%20replacement%20led%20to%20x-rays,%20an%20appointment%20with%20an%20orthopedic%20surgeon,%20and%20surgery%20scheduled%20for%20September%2018%E2%80%94this%20year!%3C/p%3E%3Cp%3EBut%20for%20now,%20here's%20a%20few%20pictures%20of%20this%20summer's%20bins%20and%20a%20recipe%20we%20enjoyed%20last%20night.%3C/p%3E%3Cp%3ESalade%20Nicoise-serves%206-8%3C/p%3E%3Cp%3EVinaigrette:%3C/p%3E%3Cp%3ECooking%20the%20potatoes,%20eggs,%20and%20green%20beans%20in%20the%20same%20pot%20cuts%20down%20on%20prep%20time%20and%20clean%20up.%20To%20do%20this,%20put%20the%20potatoes%20in%20a%20large%20saucepan,%20add%20water%20to%20cover%20and%20a%20nice%20pinch%20of%20salt;%20bring%20to%20a%20boil%20over%20medium%20heat.%20Simmer%20the%20potatoes%20for%2012%20minutes%20to%20give%20them%20a%20head%20start,%20and%20then%20add%20the%20eggs.%20Place%20a%20steamer%20basket%20or%20colander%20on%20top%20of%20the%20simmering%20water.%20Put%20the%20green%20beans%20in%20the%20steamer%20and%20cover%20with%20a%20lid.%20Steam%20the%20beans%20for%205%20minutes%20until%20crisp-tender%20while%20continuing%20to%20cook%20the%20potatoes%20until%20fork%20tender.%20Drain%20out%20the%20water%20and%20put%20the%20potatoes,%20eggs,%20and%20green%20beans%20in%20a%20colander;%20rinse%20briefly%20under%20cold%20water.%20Peel%20the%20shells%20off%20the%20eggs%20and%20cut%20them%20in%201/2%20lengthwise.%3C/p%3E%3Cp%3EPlace%20a%20large%20skillet%20over%20medium-high%20heat.%20Rub%20the%20tuna%20on%20all%20sides%20with%20olive%20oil,%20and%20a%20bit%20of%20the%20vinaigrette;%20season%20with%20a%20fair%20amount%20of%20salt%20and%20pepper.%20Lay%20the%20tuna%20in%20the%20hot%20pan%20and%20sear%20for%20approximately%202%20minutes%20on%20each%20side,%20as%20the%20tuna%20cooks,%20the%20red%20meat%20will%20become%20whiter.%20Transfer%20the%20tuna%20to%20a%20cutting%20board%20and%20slice.%3C/p%3E%3Cp%3ETo%20assemble%20the%20salad:%20combine%20the%20potatoes,%20green%20beans,%20tomatoes,%20olives,%20capers,%20and%20chives%20in%20a%20large%20mixing%20bowl.%20Take%20the%20vinaigrette%20and%20give%20it%20another%20good%20shake%20to%20recombine.%20Drizzle%20the%20salad%20with%20enough%20vinaigrette%20to%20fully%20moisten%20and%20toss%20gently%20to%20coat;%20season%20with%20salt%20and%20pepper.%20Take%20care%20not%20to%20mush%20up%20the%20ingredients%20-%20the%20important%20thing%20about%20salad%20Nicoise%20is%20that%20it%20is%20arranged%20nicely%20on%20a%20platter%20with%20all%20the%20elements%20keeping%20their%20individual%20integrity.%20Put%20the%20tossed%20salad%20down%20the%20center%20of%20a%20serving%20platter%20and%20lay%20the%20seared%20tuna%20attractively%20across%20the%20top%20and%20the%20eggs%20around%20the%20rim.%20Drizzle%20with%20the%20remaining%20vinaigrette%20and%20serve.%3C/p%3E){kind=link}
