Receta Home Cured Herring

Ingredientes
- 2 c. Dry white wine
- 1 c. White vinegar
- 1 c. Water
- 1/2 c. Fine sea salt
- 1/2 c. Light brown sugar
- 3 Tbsp. Pickling spice
- 2 x Dry warm peppers - (to 3)
- 1 lrg Onion thinly sliced
- 1 Tbsp. Black peppercorns
- 2 lb Scaled and gutted fresh herring Black bread Lowfat sour cream Thinly-sliced sweet onions
Direcciones
- In a noncorrosive pot, combine all ingredients except fish. Bring to the boil, reduce, and simmer for 30 min. Add in fish to simmering brine and poach 12 min before removing from the heat. Let stand to cold 1 hour before placing in a noncorrosive container large sufficient to hold all the liquid. Cover container and chill fish totally submerged in brine for 3 days.
- Serve with black bread, lowfat sour cream, and onions.
- This recipe yields 8 servings.
