A friend of mine got me hooked on making fresh, homemade mayonnaise a while back. There is a special technique that you need to use in order to be successful.

Until I began using this special technique I have always failed at making homemade mayonnaise. If you want your homemade mayonnaise to thicken properly you need to use a special tool. The trick is to add your oil at a drizzle. I use a candy making bottle that adds just the right amount of oil in a very slow flow. Works like a charm with my hand mixer.

  • 1 lemon (you need to squeeze the juice out of it)
  • 1/4 teaspoon of sea salt
  • 1 1/4 cup your favorite liquid vegetable oil
  • 2 egg whites

  1. Put egg whites into a glass 2 cup liquid measuring cup.
  2. Beat on high with an electric hand mixer.
  3. After the egg whites have become whipped and fluffy begin to add the oil in a slow drizzle with one had while continuing to beat with the other.
  4. Keep adding oil until the oil is completely used up.
  5. When you have the desired consistency add the juice of the lemon and salt to taste. You do not need to add all the lemon juice from the freshly squeezed lemon. Add to taste a little at a time.
