Ingredientes
- 225g (2 sticks, or 1 cup) butter, room temperature
- 150g (3/4 cup, packed) light brown (demerara) sugar
- 1 tsp vanilla extract
- 2 tbsp liquid honey
- 1 large egg, room temperature
- 280g (2 1/4 cups, spooned & scraped) all-purpose (plain) flour
- 2 tsp baking powder
- 1/2 tsp salt
- 100g (1 1/2 cups) desiccated coconut
- Filling
- about 1/3 cup raspberry jam
- 60g (1/2 stick, or 4 tbsp) butter, room temperature
- 1/2 tsp vanilla extract
- 125g (1 cup unsifted) powdered (confectioners’) sugar
