- 4-6 tablespoons olive oil for frying
- 1 cup chopped onions
- 1 cup chopped red bell pepper
- 2 cups chopped fresh mushrooms
- 1 clove garlic, crushed
- 1 cup fresh or frozen sweet corn
- 1 (15 oz) can black beans, drained and rinsed
- 1 (19 oz) can ready-to-serve lentil soup
- 2 eggs, slightly beaten
- 2 cups fresh spinach leaves
- ¾ cup Panko bread crumbs
- 2 cups quick cooking oatmeal
- 1 teaspoon Italian seasoning
- ½ teaspoon cayenne pepper
- ½ teaspoon kosher salt

,%20and%20has%20decided%20to%20jump%20on%20the%20%22mostly%22%20vegetarian%20bandwagon.%20I%20really%20have%20to%20go%20with%20the%20flow%20here....%3C/p%3E%3Cp%3EThis%20weekend,%20I%20had%20a%20request%20from%20Taylor%20for%20some%20homemade%20food.%20As%20a%20poor%20college%20student%20(that%20dang%20chemistry%20book%20was%20$400!),%20she%20has%20been%20existing%20on%20ramen%20noodles.%20She%20specifically%20requested%20a%20couple%20of%20homemade%20pizzas--one%20veggie%20for%20her,%20and%20one%20pepperoni%20for%20the%20boyfriend--and%20some%20veggie%20burgers.%20The%20veggie%20burgers%20are%20a%20relatively%20new%20invention%20of%20mine.%20They%20even%20have%20a%20secret%20ingredient.%20Care%20to%20wager%20a%20guess?%20No?%20OK,%20then.%20I'll%20spill%20the%20beans.%20Pun%20intended.%20:)%3C/p%3E%3Cp%3EThe%20soup%20adds%20some%20liquid%20and%20some%20flavor%20to%20the%20veggie%20burgers.%3C/p%3E%3Cp%3EHomemade%20Veggie%20Burgers%3C/p%3E%3Cp%3EHeat%202%20tablespoons%20of%20the%20oil%20in%20a%20large%20skillet%20over%20medium%20high%20heat.%20Turn%20down%20the%20heat%20to%20medium,%20and%20add%20the%20onions%20and%20peppers,%20then%20saute%20until%20softened,%20about%205%20minutes.%20Add%20the%20mushrooms,%20corn,%20and%20garlic,%20then%20continue%20to%20cook%20until%20the%20mushrooms%20are%20softened%20and%20browned,%205-6%20minutes.%20Stir%20in%20the%20corn.%20Remove%20from%20heat%20and%20cool%20slightly.%20Reserve%20skillet%20for%20sauteing%20the%20burgers.%20While%20the%20vegetables%20are%20cooking,%20place%20the%20black%20beans%20in%20a%20large%20bowl%20and%20mash%20slightly%20with%20a%20fork.%20Stir%20in%20the%20can%20of%20lentil%20soup%20and%20the%20beaten%20eggs.%20Add%20the%20vegetables%20and%20the%20spinach%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3ECombine%20the%20oatmeal,%20breadcrumbs,%20and%20seasonings%20in%20a%20medium%20bowl.%20Add%20to%20the%20lentil%20and%20bean%20mixture,%20mixing%20well.%20To%20form%20the%20patties,%20line%20a%20custard%20cup%20with%20plastic%20wrap,%20leaving%20an%20overhang%20and%20fill%20with%20the%20bean%20mixture.%20Carefully%20pull%20the%20bean%20mixture%20out%20of%20the%20custard%20cup%20and%20fold%20the%20plastic%20wrap%20over%20the%20top%20to%20form%20into%20a%20patty.%20Repeat%20until%2012%20patties%20are%20formed,%20leaving%20wrapped%20in%20the%20plastic%20until%20ready%20to%20cook%20(you%20may%20freeze%20the%20patties%20at%20this%20point).%20Add%20a%20tablespoon%20of%20oil%20to%20the%20skillet%20and%20heat%20over%20medium%20high%20heat.%20Unwrap%202-3%20bean%20patties%20and%20carefully%20add%20to%20the%20heated%20skillet.%20Reduce%20the%20heat%20to%20medium%20low%20and%20fry%20for%20about%205%20minutes%20per%20side,%20or%20until%20browned%20and%20cooked%20through.%20Repeat%20for%20the%20remaining%20burgers,%20adding%20additional%20oil%20to%20the%20skillet,%20if%20needed.%3C/p%3E%3Cp%3EI%20chose%20the%20red%20bell%20pepper%20for%20some%20color.%20Feel%20free%20to%20use%20green%20instead.%3C/p%3E%3Cp%3EI%20used%20Trader%20Joe's%20Roasted%20Sweet%20Corn...because%20I%20like%20it.%20:)%3C/p%3E%3Cp%3EInstead%20of%20canned%20black%20beans,%20I%20cooked%20my%20own.%20The%20only%20problem%20was%20that%20they%20were%20a%20little%20hard,%20so%20I%20pulsed%20them%20in%20a%20food%20processor.%20All%20was%20good.%3C/p%3E%3Cp%3EHere's%20where%20I%20could%20have%20added%20a%20slew%20of%20fresh%20herbs...but%20I%20didn't%20have%20any.%20Feel%20free.%3C/p%3E%3Cp%3EIsn't%20this%20a%20clever%20way%20of%20forming%20the%20patties?%20No%20fuss,%20no%20muss.%3C/p%3E%3Cp%3EI%20filled%20them%20almost%20to%20the%20top%20and%20got%2012%20patties.%3C/p%3E%3Cp%3EAt%20this%20point%20you%20can%20freeze%20the%20patties.%20Once%20they%20are%20frozen,%20they%20are%20easier%20to%20handle.%20When%20I%20fry%20them%20from%20frozen,%20I%20put%20a%20lid%20on%20the%20pan%20so%20that%20they%20cook%20through.%3C/p%3E%3Cp%3EOf%20course,%20I%20toasted%20the%20bun%20with%20a%20little%20butter,%20then%20I%20spread%20some%20basil/tomato%20hummus%20on%20the%20bottom%20bun%20and%20topped%20it%20with%20some%20fresh%20spinach.%3C/p%3E%3Cp%3EHave%20you%20seen%20the%20Pretzel%20Buns%20at%20Trader%20Joe's?%20Yum!%3C/p%3E%3Cp%3EYou%20can%20add%20whatever%20toppings%20you%20love.%20I%20used%20some%20prepared%20Taboule%20that%20I%20bought%20at%20Costco.%20%20MMM...tomatoes,%20onions,%20parsley,%20cracked%20wheat,%20seasonings,%20olive%20oil....this%20was%20great%20on%20the%20burger.%3C/p%3E%3Cp%3EThe%20bottom%20line%20is%20that%20these%20veggie%20burgers%20are%20tastier%20and%20far%20more%20economical%20that%20the%20ones%20you%20find%20frozen%20%20at%20the%20store.%20In%20fact,%20the%20husband%20is%20wanting%20me%20to%20make%20a%20second%20batch%20for%20our%20own%20freezer....they%20must%20be%20good!%3C/p%3E){kind=link}
