  • 4 cups cooked black-eyed peas
  • 2 cups long grain white rice (4 cups cooked)
  • 1 (28 oz.) can diced tomatoes, drained
  • 2 green onions, diced (both green and white parts)
  • Salt, pepper, and hot sauce (such as Texas Pete) to taste

Direcciones

  1. Drain liquid off peas and discard.
  2. Add tomatoes and onions to peas.
  3. Meanwhile, cook rice according to package directions. When rice is done, combine peas and rice in a large pot, tossing to combine and warm over low heat or in a warm oven (about 200˚).
  4. Season with salt, pepper and hot sauce to taste.
