%20is%20space%20to%20brine%20the%20brisket,%20time%20to%20let%20it%20happen,%20and%20then%20the%20means%20to%20cook%20it%20afterwards.%20I%20didn%E2%80%99t%20think%20that%20last%20bit%20through%20properly,%20but%20I%E2%80%99ll%20get%20to%20that.%3C/p%3E%3Cp%3EFirst%20you%20need%20to%20buy%20the%20beef%20brisket.%20I%20got%20mine%20directly%20from%20Smithfields,%20which%20is%20obviously%20a%20LOT%20cheaper%20than%20buying%20from%20a%20butcher.%20This%20is%20how%20I%20ended%20up%20with%20a%203kg%20monster%20in%20my%20fridge.%20Thankfully%20it%20did%20fit,%20since%20my%20fridge%20is%20the%20size%20of%20a%20small%20cottage%20but%20if%20you%20have%20a%20normal%20sized%20appliance%20then%20you%20can%20keep%20it%20submerged%20in%20a%20non-reactive%20bucket%20or%20tub%20(nothing%20made%20from%20copper,%20aluminium,%20cast%20iron%20or%20brass)%20in%20a%20cool%20place.%20Apparently.%20I%E2%80%99d%20rather%20keep%20it%20in%20the%20fridge.%3C/p%3E%3Cp%3ESecondly%20you%20need%20to%20work%20out%20how%20to%20brine%20the%20thing.%20Salt%20beef%20comes%20out%20pink%20because%20either%20saltpetre%20or%20curing%20powder%20is%20added%20to%20the%20brine.%20If%20this%20isn%E2%80%99t%20added,%20it%20will%20come%20out%20a%20sort%20of%20manky%20grey%20colour,%20which%20isn%E2%80%99t%20very%20appetising.%20I%20found%20it%20quite%20hard%20to%20work%20out%20what%20to%20use%20from%20the%20advice%20online%20so%20let%20me%20lay%20it%20down%20for%20you%20here.%20Saltpetre%20isn%E2%80%99t%20used%20any%20more%20really%20because%20of%20health%20concerns%20so%20just%20forget%20that.%20What%20you%20want%20for%20this%20job%20is%20something%20called%20%E2%80%98Prague%20Powder%20No.1%E2%80%B2%20which%20is%20readily%20available%20online.%20It%E2%80%99s%20still%20poisonous%20though,%20so%20you%20need%20to%20get%20the%20amount%20right.%20I%20was%20too%20scared%20to%20do%20this%20so%20I%20asked%20my%20friend%20Lap%20and%20he%20told%20me%20what%20to%20do.%20Thank%20you,%20Lap.%20I%20then%20chucked%20in%20spices%20and%20flavours%20as%20I%20fancied.%20Once%20it%E2%80%99s%20in%20the%20brine,%20you%20leave%20it%20for%20a%20week,%20turning%20every%20day.%3C/p%3E%3Cp%3EFresh%20from%20the%20brine%3C/p%3E%3Cp%3EAfter%20this%20time,%20you%20need%20to%20cook%20that%20beast.%20If%20you%20were%20to%20rub%20it%20with%20spices%20and%20smoke%20it,%20it%20would%20become%20pastrami.%20Salt%20beef%20is%20simmered.%20This%20is%20where%20I%20screwed%20up%20because%20I%20forgot%20%E2%80%93%20I%E2%80%99m%20not%20entirely%20sure%20how%20since%20it%E2%80%99s%20such%20an%20inconvenience%20%E2%80%93%20but%20I%20forgot,%20that%20my%20gas%20hob%20is%20broken%20and%20I%E2%80%99m%20currently%20using%20a%20portable%20induction%20hob.%20This%20caused%20problems%20because%20the%20pan%20I%20had%20intended%20to%20cook%20the%20beef%20in%20would%20not%20work%20on%20the%20induction%20hob.%20I%20had%20to%20therefore%20use%20two%20induction%20compatible%20pans,%20and%20cut%20the%20brisket%20in%20half.%20Problem%20solved?%20No.%20They%20still%20didn%E2%80%99t%20fit.%20I%20stressed.%20I%20fretted.%20I%20moaned%20on%20Twitter%20and%20received%20some%20great%20advice%20from%20Tim%20who%20suggested%20using%20an%20induction%20pan%20as%20a%20conductor%20and%20sitting%20the%20giant%20pan%20inside%20it.%20I%20did%20that,%20then%20he%20noticed%20my%20conductor%20pan%20was%20non-stick,%20before%20I%E2%80%99d%20noticed%20the%20kitchen%20was%20filling%20with%20an%20unpleasant%20plastic%20smell%E2%80%A6look%20just%20make%20sure%20your%20pan%20is%20big%20enough%20yeah?%3C/p%3E%3Cp%3EReady%20for%20simmering%3C/p%3E%3Cp%3EThe%20brisket%20finally%20cooked%20after%207%20long%20hours,%20during%20which%20I%20boomeranged%20back%20and%20forth%20to%20the%20kitchen,%20adjusting%20the%20heat%20and%20turning%20the%20meat%20over%20and%20over%20but%20then%E2%80%A6oh%20man%20is%20it%20worth%20it%20for%20the%20results.%20My%20very%20own%20wobbly%20hunk!%20And%20all%20with%20lovely%20big%20pieces%20of%20fat%20still%20clinging%20to%20the%20outside.%20At%20this%20point%20you%20must%20eat%20some,%20obviously,%20and%20then%20you%20must%20put%20some%20inside%20a%20bagel%20or%20rye%20bread%20with%20mustard%20and%20eat%20with%20a%20pickle%20alongside.%3C/p%3E%3Cp%3EHey,%20baby%3C/p%3E%3Cp%3EIf%20you%20want%20to%20carry%20on%20and%20make%20corned%20beef,%20then%20you%20want%20to%20set%20some%20aside%20for%20that,%20and%20I%20heartily%20recommend%20that%20you%20do.%20Remember,%20British%20readers,%20the%20tinned%20corned%20beef%20of%20your%20childhood?%20Well%20this%20is%20that%20but%20about%2010%20times%20tastier.%20It%E2%80%99s%20basically%20chopped%20salt%20beef%20which%20is%20set%20in%20melted%20butter.%20Yes.%20This,%20in%20a%20sandwich,%20with%20Branston%20and%20a%20bit%20of%20extra%20butter%20for%20good%20measure%20is%20like%20the%20lunchbox%20of%20dreams.%3C/p%3E%3Cp%3EHuge%20thanks%20to%20Lap-fai%20Lee%20for%20his%20advice%20on%20ratios%20in%20this%20recipe.%3C/p%3E%3Cp%3ESalt%20Beef%20and%20Corned%20Beef%3C/p%3E%3Cp%3EIN
