  • 4 x chicken breast halves without skin -- boneless
  • 2 Tbsp. extra virgin olive oil
  • 1/4 tsp salt
  • 1/2 tsp dry oregano -- divided
  • 1 c. pizza sauce
  • 1/2 tsp dry basil
  • 4 x French rolls -- halved and toasted
  • 1 sm zucchini -- shredded
  • 1/4 c. shredded Mozzarella cheese
  • 1/4 c. grated Parmesan cheese Brush each piece of chicken with extra virgin olive oil, sprinkle with salt and 1/4 tsp. oregano.


  1. Cook chicken in a grilling skillet or possibly lightly greased nonstick skillet over medium-high heat about 4 min on each side or possibly till done. Set chicken aside.
  2. Combine pizza sauce, basil, and remaining 1/4 tsp. oregano in skillet; cook over medium-high heat till thoroughly heated.
  3. Remove from heat; add in chicken, and keep hot.
  4. Place rolls on a baking sheet; spread sauce proportionately on bottom half of each roll; top proportionately with chicken, zucchini, and cheeses.
  5. Broil 3 inches from heat (with electric oven door partially open) 2 to 3 min or possibly till cheese melts. Cover with tops of rolls.
  6. Yield: 4 servings.
