Receta Jay's Favorite: Grilled Pesto Pizza

Ingredientes
- Pre-made or possibly homemade pizza shell Thinly-sliced fresh ripe tomatoes Pine nuts Red pepper flakes
- 6 c. fresh basil leaves
- 2 c. extra virgin olive oil
- 3/4 c. pine nuts or possibly walnuts
- 3/4 c. grated Parmesan cheese
- 10 x fresh garlic cloves
- 1 tsp freshly-grnd black pepper Salt to taste

- For the Pesto Sauce: Put all the ingredients into a food processor and blend well together. Chill till needed.
- When you are ready to have one of the world's greatest pizzas, this is how you build it. On top of a pre-made (or possibly homemade) pizza shell, place:
- 1st - A generous layer of Pesto Sauce2nd - Thinly sliced fresh ripe tomatoes3rd - A handful of pine nuts4th - 1/2 tsp. red pepper flakes
- Cook it on a warm grill. Bake the pizza lid-down, away from the flames for about 15 min. If you have a warming rack, which is the best place to do it. The pizza is ready when the pine nuts have browned and the oil in the pesto is slightly sizzling.
- Do not put too much topping on the shell - the idea is to create a balance between the crisp shell and the fragrant toppings. The flavors and textures should work in harmony.
- Comments: Here is an absolutely fabulous pizza, and you can do it on the grill! The sauce is a classic pesto, that, of course, makes everything taste good. To be honest, if you feel entirely too lazy to do your own pizza shells you can go with a ready-made brand found in most grocery stores. Make a lot of pesto sauce. You can use it many different ways and it freezes well.
