%20and%20butter%20peas%20which%20yields%20light%20broths.%3C/p%3E%3Cp%3ELady%20Peas%20are%20my%20very%20favorite%20summer%20delicacy%20and%20they%20are%20only%20available%20for%20a%20short%20time%20during%20the%20summer%20and%20you%20can%20only%20get%20%E2%80%98em%20here%20in%20the%20South.%20Some%20folks%20refer%20to%20these%20as%20cream%20peas%20'cause%20when%20cooked,%20that's%20exactly%20what%20you%20taste,%20pure%20creaminess.%20These%20old-fashion%20heritage%20peas%20are%20smaller,%20sweeter%20and%20a%20lot%20more%20tender%20than%20most%20peas.%3C/p%3E%3Cp%3EVery%20good%20green%20but%20best%20when%20matured%20into%20the%20cream%20coloration.%20The%20small%20pods%20resemble%20kernels%20of%20fresh%20white%20corn%20cut%20from%20the%20cob%20and%20are%20just%20as%20tender%20and%20almost%20as%20sweet.%20Lady%20peas%20are%20best%20cooked%20with%20very%20little%20seasoning,%20nothing%20too%20heavy%20to%20mask%20over%20the%20delicate,%20buttery%20flavor.%20I%20hear%20tell%20some%20folks%20say%20white%20acre%20peas%20are%20the%20same%20and%20maybe%20so,%20I%20guess%20we%20a%20little%20slow%20down%20here,%20not%20up%20to%20changbut%20if%20you%20ever%20get%20your%20hands%20on%20some%20tiny,%20fresh%20picked%20lady%20peas,%20I%20think%20you'll%20be%20convinced%20otherwise.%3C/p%3E%3Cp%3EBy%20the%20way,%20congratulations%20to%20Jim%20Smith,%20executive%20chef%20to%20Alabama%20Gov.%20Robert%20Bentley,%20with%20his%20win%20last%20week%20in%20the%20Great%20American%20Seafood%20Cook-off%20in%20NOLA.%20Facing%20some%20of%20the%20heavyweights%20of%20the%20American%20culinary%20scene,%20he%20represented%20Alabama%20in%20the%208th%20annual%20Great%20American%20Seafood%20Cook-off,%20an%20event%20designed%20to%20focus%20attention%20on%20the%20diversity%20of%20American%20seafood.%20The%20dish%20he%20chose%20to%20prepare%20was%20called%20%E2%80%9CLate%20Summer%20Alabama%20Bounty%E2%80%9D%20and%20it%20featured%20shrimp%20and%20crab%20marinated%20with%20garam%20masala,%20scented%20yellow%20squash%20puree,%20bacon-peach%20relish%20and%20Spanish%20basil%20oil.%20The%20kicker%20that%20impressed%20the%20judges%20-%20a%20dish%20he%20cooks%20regularly%20for%20the%20first%20family,%20lady%20peas.%20And%20on%20his%20way%20to%20the%20Big%20Easy,%20Chef%20Smith%20also%20stopped%20here%20in%20Mobile%20at%20Southern%20Fish%20and%20Oyster%20Co.%20my%20go-to-place%20for%20seafood,%20where%20he%20picked%20up%20the%20U-8%20shrimp%20that%20really%20impressed%20the%20judges...%20Congrats%20Chef%20Smith.%3C/p%3E%3Cp%3EFinally,%20here's%20my%20simple%20way%20to%20cook%20most%20all%20types%20of%20peas,%20fresh%20or%20frozen.%3C/p%3E%3Cp%3ELady%20Peas%3C/p%3E%3Cp%3EBasic%20Stock%20for%20all%20Shelled%20Peas%20and%20Beans%3C/p%3E%3Cp%3EA%20little%20smoke%20meat,%20like%20ham,%20hock%20or%20neck-bone%3C/p%3E%3Cp%3EGarlic%20toe%3C/p%3E%3Cp%3EQuartered%20sweet%20or%20white%20onion%3C/p%3E%3Cp%3ESmall%20bay%20leaf%3C/p%3E%3Cp%3EFreshly%20ground%20black%20peppercorns%3C/p%3E%3Cp%3EDepending%20on%20the%20type%20of%20peas%20or%20beans%20determines%20how%20much%20smoked%20meat%20to%20use.%20In%20the%20pot%20shown,%20I%20made%20stock%20for%20two%20vegetables%20-%20the%20Lady%20Peas%20here%20and%20large%20butter-beans.%20The%20lighter%20the%20peas,%20the%20less%20smoke%20flavoring%20is%20needed,%20in%20my%20opinion.%20Start%20out%20with%205%20to%206%20cups%20of%20water%20for%20about%204%20cups%20of%20peas.%20Bring%20all%20above%20ingredients%20with%20the%20water%20to%20a%20boil%20and%20let%20simmer%20covered%20on%20low%20for%20a%20good%20hour.%20From%20here%20it%20is%20a%20matter%20of%20preference,%20sometimes%20I%20strain%20the%20stock%20and%20sometimes%20I%20just%20leave%20it%20be.%20But%20the%20next%20step%20I%20think%20is%20the%20most%20important.%3C/p%3E%3Cp%3EIn%20a%20separate%20saucepan,%20saute%20the%20onion%20in%20the%20bacon%20grease%20until%20clear,%20add%20the%20peas%20and%20coat%20them%20in%20the%20grease.%20Barely%20cover%20the%20peas%20with%20the%20stock%20and%20bring%20to%20a%20simmer.%20I%20find%20the%20darker%20the%20peas,%20the%20more%20stock%20needed%20and%20longer%20cooking%20times.%20Add%20salt%20to%20taste.%20Reduce%20heat%20to%20low,%20cover%20and%20cook%20until%20just%20tender;%20it%20will%20not%20take%20long%20at%20all%20for%20Lady%20Peas.%20Turn%20off%20heat%20and%20let%20peas%20set%20in%20the%20pot-likker%20to%20soak%20up%20the%20flavor.%3C/p%3E%3Cp%3ENote:%20About%201%201/2%20cups%20of%20strained%20stock%20was%20added%20to%20the%20Lady%20Peas%20while%20the%20rest,%20including%20the%20neck-bone,%20remained%20for%20the%20butter-beans.%3C/p%3E){kind=link}
