- 2 pounds ground pork
- 1 medium-to-large onion (about 8 ounces), diced; about 1 1/2 cups diced onion
- 1 to 2 large cloves garlic, chopped fine
- 1/2 tsp ground clove
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- several dried sage leaves, crushed
- 1/2 tsp dried thyme
- 1 tsp ground black pepper
- 1/2 to 3/4 tsp salt, to taste
