- Dandelion Greens in a Bagna Cauda Vinaigrette, Meyer Lemon, Poached Egg
- 1 bunch dandelion greens, majority of the stem discarded, roughly chopped
- 1/2 c olive oil
- 3 T minced garlic
- 6 anchovy fillets (preferably in oil)
- 1-2 T butter
- 4 eggs
- 1 Meyer lemon - for the record any citrus on hand works here!
- 1/2 cup walnuts, toasted
