We were in the mood for Lo Mein. Babe preferred spaghetti instead of egg noodles. Natural Grocers, organic store with HQ in Denver (Vitamin Cottage, Inc. / publicly traded), opened here awhile ago. The organic produce is the best in town. The fresh Bok Choy is like I've never seen before. I used that in place of spinach, kale or chard. Yet, any of those is a good choice. Opted for locally "farmed" honey as the sweetener. Didn't have Sriracha. Substituted 3/4 tsp of Cayenne. Mangia.

Ingredientes

  • 16 oz of spaghetti
  • 16 oz Cremini shrooms - sliced
  • 1 yellow onion - chopped
  • 2 fresh Bok Choy or substitute the greens of your choice - chopped
  • 1 red pepper - julienned
  • 1 package of snow peas - remove spine string then chop (Babe's job b/c I don't have the patience for that)
  • 2 jalapenos - de-seeded, de-veined then minced
  • 2 garlic cloves - minced
  • 3/4 tsp cayenne
  • Sesame oil - 1 tsp
  • Honey or sweetener of your choice - 2 tsp (sweeten to your taste)
  • Nob of fresh ginger - minced - 1 tbs (we can't get enough fresh ginger)
  • Bragg's Liquid Coconut Aminos (lower sodium content than low sodium soy sauce) - 2 tbs

Direcciones

  1. Sauce - combine the sesame oil, sweetener, ginger, and Bragg's. Mix thoroughly. Set aside. Best if made an hour or two ahead.
  2. Saute shrooms and onions. Wait for liquid to evaporate then add the red pepper, snow peas, jalapeno, garlic,and bok choy. Continue sauteing and stir in the cayenne. Saute until the latter veggies are softened.
  3. Boil the spaghetti following package instructions. We prefer ours al dente. Drain, add to the veggies. Then coat with the sauce
  4. Mix thoroughly. Have at it.
