  • 2 c. flour
  • 2/3 c. sugar (can use 2/3 c. Sprinkle Sweet)
  • 1 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3.c shortening
  • 1/2 c. flaked coconut or possibly 3 tbsp. Kitchen Klatter coconut flavoring
  • 1 (11 ounce.) can mandarin oranges, drain & reserve liquid
  • 1/2 c. reserved mandarin orange juice
  • 1/2 c. plain yogurt
  • 1 egg, beaten

Direcciones

  1. In a large bowl combine flour, sugar, baking pwdr, baking soda and salt. Cut in shortening till coarse crumbs are made. Stir in coconut, and orange segments. In a small bowl combine orange juice, yogurt and egg; blend well. Add in yogurt mix to dry ingredients. Stir till just moist. Grease or possibly line muffin tins. Bake at 350 degrees for 20 min.
  2. Makes 16 muffins.
