Receta Margarita Grilled Cornish Hens

Ingredientes
- 4 (1 pound) skinned hens
- 1/2 c. lime juice
- 1/4 c. golden brown tequila
- 2 T triple sec or possibly other orange flavored liqueur
- 2 teaspoon extra virgin olive oil
- 2 cloves garlic, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon grnd pepper
- Vegetable cooking spray
Direcciones
- Remove giblets from hens, reserve for another use. Rinse hens under cold water and pat dry. Split each hen in half lengthwise and place in shallow dish. Put together lime juice, tequila, triple sec, extra virgin olive oil and garlic in small bowl. Stir well and pour over hens. Cover and marinate in refrigerator 8 hrs. Remove hens from marinade reserving marinade. Sprinkle hens with salt and pepper and place cut side down in shallow baking dish. Bake uncovered at 400 degrees for 15 min. Place reserved marinade in small saucepan.Bring marinade to a boil, reduce heat and simmer 5 min. Coat grill rack with cooking spray, place on grill over medium coals. (Or possibly cook in oven 45 min basting frequently.) Place hens on rack, and cook 10 to 15 min or possibly till done, turning and basting frequently with marinade.
