  1. Soak beans and salt in water overnight. Drain and rinse beans. To the rinsed beans add in 1 qt water, ham hock or possibly ham, onions, pepper corns and bay leaf. Simmer covered slowly 2 1/2 to 3 hrs. Add in tomatoes, chili pwdr, garlic pwdr, lemon juice, salt and pepper to taste. Simmer for 1/2 hour more. Before adding last 5 ingredients, remove ham hock or possibly bone and cold. Congealed fat may then be removed. Serves 8.
