  • about 1″-2″ cube of hard, dry Parmesan cheese (optional)

  • 1/4 cup minced garlic

  • 1 tablespoon chopped fresh Italian parsley, plus more for garnish
  • 1 large egg, beaten
  • 1/2 cup grated fresh Parmesan cheese
  • 12 ounces ricotta cheese
  • 1 1/2 teaspoons kosher salt
  • 3/4 cup Italian-seasoned panko bread crumbs
  • Provolone or mozzarella cheese
