,%20and%20I%20have%20only%20made%20one%20post%20on%20here.%20I%20have%20been%20away%20doing%20field%20work%20for%20most%20of%20last%20week,%20away%20from%20the%20Internet,%20so%20posting%20was%20impossible.%20At%20least%20I%20got%20a%20good%20portion%20of%20work%20done%20and%20was%20able%20to%20spend%20some%20time%20with%20my%20friend%20and%20her%20cute%20dog.%20We%20didn't%20eat%20out,%20like%20we%20normally%20do%20while%20doing%20field%20work.%20Instead,%20we%20opted%20to%20cook%20at%20the%20field%20house,%20where%20we%20made%20some%20really%20good%20beans%20and%20rice,%20which%20I%20wish%20to%20share%20if%20I%20have%20time%20to%20before%20I%20move%20out%20of%20my%20current%20apartment%20on%20the%2027th%20of%20July.%20I%20won't%20get%20to%20move%20into%20my%20new%20place%20until%20the%203rd%20of%20August,%20so%20posting%20may%20be%20slim.%20If%20I%20end%20up%20staying%20with%20friends%20instead%20of%20staying%20at%20my%20field%20house%20doing%20work,%20I%20will%20definitely%20cook%20for%20them%20in%20return%20and%20post%20any%20recipes%20that%20I%20make%20for%20them!%3C/p%3E%3Cp%3EToday's%20lunch%20was%20a%20product%20of%20my%20going%20to%20the%20store%20with%20a%20minimal%20shopping%20list%20and%20thinking%20%22just%20get%20some%20salad%20ingredients.%22%20Lucky%20for%20me,%20I%20stayed%20within%20budget%20despite%20my%20lack%20of%20direction.%20I%20grabbed%20several%20ingredients%20that%20reminded%20me%20of%20two%20of%20my%20favorite%20Mediterranean%20dishes:%20horiatiki%20salata,%20which%20is%20a%20common%20Greek%20salad,%20and%20Italian%20antipasti.%20I%20have%20been%20fortunate%20enough%20to%20have%20spent%20some%20time%20in%20Greece,%20but%20I%20never%20actually%20made%20it%20to%20the%20Mediterranean%20Sea,%20just%20the%20Aegean%20Sea.%20I%20haven't%20been%20to%20Italy,%20but%20it's%20on%20my%20list%20of%20places%20to%20see%20before%20I%20die.%3C/p%3E%3Cp%3EHere%20is%20my%20Mediterranean%20salad,%20full%20of%20vegetables%20with%20a%20lemon-feta%20dressing.%20I%20added%20the%20feta%20to%20the%20dressing%20because%20that's%20my%20favorite%20part%20of%20the%20Greek%20salad,%20so%20I%20wanted%20some%20cheese%20in%20every%20bite.%20The%20oregano%20as%20a%20garnish%20lends%20a%20mintiness%20to%20each%20bite%20as%20well.%20Feel%20free%20to%20add%20any%20other%20vegetables---cucumber%20and%20red%20onion%20would%20be%20nice%20additions.%3C/p%3E%3Cp%3EMediterranean%20Salad%3C/p%3E%3Cp%3E1.%20In%20the%20bottom%20of%20the%20salad%20bowl,%20combine%20the%20lemon%20juice,%20vinegar,%20oil,%20honey,%20and%20some%20salt%20and%20pepper.%20Whisk%20with%20a%20fork%20to%20combine.%20Add%20half%20of%20the%20feta%20cheese%20and%20with%20the%20back%20of%20the%20fork,%20mash%20some%20of%20the%20cheese%20into%20the%20dressing%20and%20re-whisk.%3C/p%3E%3Cp%3E2.%20Add%20all%20of%20the%20rest%20of%20the%20salad%20ingredients,%20excluding%20the%20remaining%20cheese%20and%20oregano,%20and%20toss.%3C/p%3E%3Cp%3E3.%20Place%20the%20salad%20on%20each%20serving%20plate%20and%20garnish%20with%20the%20cheese%20and%20the%20oregano.%3C/p%3E%3Cp%3EServings%20per%20recipe:%203%3C/p%3E%3Cp%3EPer%20serving:%3C/p%3E%3Cp%3ECalories:%20360%3C/p%3E%3Cp%3EFat:%2014%20g%3C/p%3E%3Cp%3ESaturated%20fat:%204.2%20g%3C/p%3E%3Cp%3ECholesterol:%2010%20mg%3C/p%3E%3Cp%3ESodium:%20660%20mg%3C/p%3E%3Cp%3ECarbohydrates:%2044%20g%3C/p%3E%3Cp%3EFiber:%2014%20g%3C/p%3E%3Cp%3EProtein:%2018.5%20g%3C/p%3E){kind=link}
