This is a delicious way of cooking fresh peas, and makes an excellent accompaniment to any meal. The flavor comes from the vegetables themselves, so use vine tomatoes and organic peas if possible.

Prepare Tomatoes:
1.
Cut a cross in the base of each tomato. Place the tomatoes in a heatproof bowl and pour boiling water over to cover. Leave in hot water for 3 minutes, then lift the tomatoes out on a slotted spoon and plunge them into a bowl of ice cold water; drain. The skins will have begun to peel back.

Remove the core and the skin completely. Then cut the tomatoes in half and squeeze out the seeds. Chop the flesh into 1/2-Inch dice.
Prepare Peas:
1.
Melt the butter in a large skillet. Cook the garlic until golden. Do not overcook or it will add a bitter taste.

Lift garlic out with a slotted spoon and discard. Add the onion slices to the pan and fry until transparent.
3.
Add the tomato to the onion, mix well, then stir in the peas. Pour over the water, lower heat and cover the pan tightly.
4.
Cook for 10 minutes, shaking the pan occasionally to stop the mixture from sticking to the bottom.
5.
Check that the peas are cooked, then season with salt and pepper. Transfer the mixture to a heated dish and serve, garnish with fresh chives.
