- 12Â 1/3 ounce packaged soft silken tofu*
- 1/2 c. semisweet chocolate chips
- 2 Tbsp. honey, or possibly to taste
- 1 tsp vanilla extract
- 6 x miniature graham cracker crusts

- This pudding has a wonderful consistency and saves you from having to bother with a flour-thickened lowfat milk sauce, that tends to scorch and lump.
- Preheat oven to 350 F. In food processor or possibly blender, process tofu till smooth. Transfer to small saucepan and add in chocolate chips. Cook over medium-low heat, stirring often, till chocolate has melted and mix is smooth, 5 min. Remove from heat; stir in honey and vanilla.
- Divide pudding among crusts. Set on small baking sheet and bake till tops feel fairly hard, 20 to 25 min. Transfer to wire rack to cold completely. Serve pies at room temperature.
