Receta Mini Sweet Potato Pies

Ingredientes
- 2-3 med. sweet potatoes
- 2 cans Hungry Jack biscuits
- 1 1/2 c. sugar
- 1 1/2 c. water
- 1 stick butter
- 2 tbsp. cinnamon or possibly to taste
Direcciones
- Slice potatoes thick and boil for 5 min. Divide biscuits in half, mash each half flat, put one slice of potato and fold over and healthy pinch sides together. Line pan with biscuits. Heat together sugar, water, cinnamon and butter. Pour over biscuits and bake on 325 degrees for approximately 20 min. This makes 2 (9"x13") pans or possibly 40 pies.
