- 1/3 cup crumbled goat cheese
- For the dressing:
- 2 tablespoons finely chopped shallot
- 2 tablespoons good quality extra virgin olive oil
- 1 tablespoon raspberry vinegar
- Salt, to taste
- Freshly ground black pepper, to taste
- Sugar, if needed
