Moby Waffle! The Hunt For The Perfect Breakfast Treat
Call Me Ishmael, (not really) but ever since I bought my first waffle iron, and the good people at Tropical Traditions sent me a complimentary bag of their organic gluten-free coconut flour to try, Sunday has become waffle day around our house and I've got a new appreciation for crazy-ass Captain Ahab and his OCD jones over that big 'ol bag of blubber, Moby Dick.
For the first time, high school English teachers be damned, I got him. I mean I really got him! That combination of stubbornness and one track mindedness (is that even a word?) possessed me, and I was going to - do you hear me - GOING TO make those waffles work!!

%20but%20ever%20since%20I%20bought%20my%20first%20waffle%20iron,%20and%20the%20good%20people%20at%20Tropical%20Traditions%20sent%20me%20a%20complimentary%20bag%20of%20their%20organic%20gluten-free%20coconut%20flour%20to%20try,%20Sunday%20has%20become%20waffle%20day%20around%20our%20house%20and%20I've%20got%20a%20new%20appreciation%20for%20crazy-ass%20Captain%20Ahab%20and%20his%20OCD%20jones%20over%20that%20big%20'ol%20bag%20of%20blubber,%20Moby%20Dick.%3C/p%3E%3Cp%3EFor%20the%20first%20time,%20high%20school%20English%20teachers%20be%20damned,%20I%20got%20him.%20I%20mean%20I%20really%20got%20him!%20That%20combination%20of%20stubbornness%20and%20one%20track%20mindedness%20(is%20that%20even%20a%20word?)%20possessed%20me,%20and%20I%20was%20going%20to%20-%20%20do%20you%20hear%20me%20-%20%20GOING%20TO%20make%20those%20waffles%20work!!%3C/p%3E%3Cp%3ELast%20week%20the%20waffles%20looked%20great,%20tasted%20good,%20but%20something%20was%20lacking...%20mainly%20moisture.%20The%20hunt%20for%20moist,%20tasty%20gluten-free,%20sugar-free%20waffles%20continued.%20Oh,%20I%20didn't%20tell%20you%20we%20were%20also%20going%20sugar%20free?%20Yes.%20I%20got%20interested%20in%20working%20with%20stevia%20and%20thought%20since%20I%20was%20going%20gluten-free%20I'd%20also%20go%20sugar%20free.%20I%20mean%20what%20the%20hell,%20why%20not%20go%20for%20broke%20here?%20I%20would've%20gone%20vegan%20too%20but%20I%20wasn't%20totally%20prepared%20for%20that.%3C/p%3E%3Cp%3EI%20did%20more%20research%20on%20coconut%20flour%20and%20all%20things%20waffly%20and%20kept%20running%20across%20comments%20about%20adding%20in%20various%20purees%20to%20sort%20of%20%22wet%22%20things%20up%20since%20coconut%20flour%20is%20a%20thirsty%20little%20bugger%20and%20absorbs%20almost%20anything%20one%20puts%20into%20it.%20So%20after%20reading%20others'%20adventures%20in%20coconut%20oil,%20I%20decided%20to%20go%20with%20one%20ingredient%20I%20had%20in%20my%20larder%20and%20a%20lot%20of%20people%20seemed%20to%20like%20-%20Pureed%20pumpkin.%20Ta%20Dah!%3C/p%3E%3Cp%3EThe%20batter%20was%20the%20same%20as%20last%20week.%20Here's%20the%20recipe.%20The%20only%20difference%20was%20the%20addition%20of%204%20Tbs%20of%20pureed%20pumpkin.%20Another%20thing%20I%20did%20differently,%20and%20this%20may%20depend%20on%20ones'%20particular%20waffle%20Iron%20(I%20chose%20a%20model%20that%20has%20several%20settings)%20and%20I%20set%20it%20to%20crispy%20exterior,%20moist%20interior.%20Turns%20out,%20that%20that%20made%20all%20the%20difference.%3C/p%3E%3Cp%3EThat%20and%20the%20addition%20of%20some%20melted%20butter%20and%20fresh%20local%20organic%20blueberries%20(from%20Watsonville).%3C/p%3E%3Cp%3EAnd%20for%20those%20who%20like%20it,%20organic%20maple%20syrup.%3C/p%3E%3Cp%3ENow%20about%20these%20waffles.%20Given%20the%20challenges,%20I%20thought%20they%20were%20pretty%20darn%20good.%20There%20is%20no%20one%20in%20our%20house%20dealing%20with%20gluten%20issues%20or%20sugar%20issues,%20but%20I%20have%20many%20friends%20who%20are,%20and%20many%20Indian%20recipes%20are%20naturally%20gluten%20free,%20so%20I'm%20interested%20in%20fixing%20things%20that%20they%20could%20potentially%20eat%20at%20a%20brunch%20at%20our%20house.%3C/p%3E%3Cp%3EOf%20course%20there%20were%20Vegas%20eggs%3C/p%3E%3Cp%3E...and%20some%20Black%20Pig%20bacon%20did%20find%20it's%20way%20onto%20the%20plate.%20I%20feel%20as%20though%20I've%20finally%20sunk%20my%20harpoon%20into%20my%20coconut%20flour%20whale%20of%20a%20waffle%20and%20taken%20it%20down!%3C/p%3E%3Cp%3EI'll%20be%20moving%20on%20to%20some%20other%20sorts%20of%20waffles%20as%20time%20goes%20by%20as%20I%20just%20love%20fiddling%20with%20that%20little%20waffler%20dingus%20I%20bought.%20Coming%20up%20next,%20a%20quick%20and%20easy%20spicy%20spinach%20dish%20that%20can%20pass%20as%20a%20side%20or%20double%20as%20a%20relish.%20Follow%20along%20with%20me%20on%20Twitter%20@kathygori%3C/p%3E){kind=link}
