Receta Mock Potato Soup

Ingredientes
- 1 head cauliflower
- 1 sm onion
- 3 c. chicken broth
- 3 slc thick bacon diced
- 3 slc ham diced (optional)
- 3 Tbsp. butter
- 1/2 c. heavy cream
- Â Â Salt to taste
- Â Â Freshly-grnd black pepper to taste
- Â Â Shredded cheddar cheese to taste
Direcciones
- Separate cauliflower and cut into small pcs. Boil with minced onion in chicken broth till tender.
- Place aprox 2 c. of cooked cauliflower in food processor with 1/4 c. of chicken broth. Add in butter and cream and pulse till creamy.
- Combine remainder of cauliflower with cooked bacon (and ham if you're using which as well) salt, pepper and shredded cheddar cheese. Mix with pulsed mix.
- This recipe yields 6 servings;
- Comments: To get a somewhat thicker soup, a healthy pinch of "not/Starch" from Expert Foods may be used.
