Receta Mom's MexiCaserole
A delicious American Style Caserole with all of the rich flavorings of Mexico!
Ingredientes
- 1lb. Extra Lean Ground Turkey (Fresh)
- 2 boxes Jiffy Corn Muffin Mix
- 6 Mission Yellow Corn Tortillas
- Light/Olive Oil Cooking Spray
- 2 Cups Mozzarella Cheese (Shredded)
- Las Palmas Enchilada Sauce (Medium Sized Can)
- 2Tsp Ground Cumin
- 1Tsp Ground Oregano
- Mexicorn Vegetable Mix (Canned/Green Giant)
- Small Can of sliced black olives
- 5 green onion stems (Chopped)
- 2 Eggs
- 2/3 Cup %Milk
Direcciones
- Preheat oven to 400 degrees
- prep corn muffin mix, according to instructions on box
- brown and crumble ground turkey
- once meat is browned, add in cumin, oregano and 1/2 cup of enchilada sauce and Mexicorn Vegetable mix) and Stir
- spray the bottom of a 9x13 baking dish with cooking spray
- line the dish by making two rows of three corn tortillas, slightly overlapping
- pour some of the meat mixture over the top of the tortillas
- sprinkle cheese, olives and chopped green onions over the cheese
- repeat steps 8 and 9 until you are out of ingredients
- smooth corn muffin mixture over the top of final meat/cheese layer
- bake uncovered for about 15 minutes.
- Remove from oven, allow to cool, eat it :)
