%3C/p%3E%3Cp%3EWhen%20one%20of%20our%20(many)%20nieces%20turned%2021,%20she%20exclaimed%20how%20much%20she%20loves%20champagne,%20while%20holding%20up%20a%20bottle%20of%20Asti%20Spumante.%20It%20was%20then%20that%20we,%20politely%20but%20firmly,%20explained%20in%20our%20best%20teacher%20voices,%20that%20Asti%20is%20not%20champagne%20by%20any%20stretch,%20and%20invited%20her%20and%20her%20boyfriend%20to%20our%20house%20at%20some%20point%20for%20champagne%20brunch.%20It%20took%20a%20year,%20but%20last%20week,%20the%20four%20of%20us%20had%20brunch,%20accompanied%20by%20an%20educational%20tasting%20of%20champagne%20(%22real%22%20champagne,%20from%20the%20champagne%20region%20of%20France)%20vs.%20cava%20(Spanish%20sparkling%20wine)%20vs.%20prosecco%20(Italian%20sparkling%20wine).%20(Asti%20was%20not%20invited).%3C/p%3E%3Cp%3EWe%20started%20prepping%20the%20night%20before%20by%20making%20dessert%20(photo%20above),%20Anne%20Burrell's%20lemon%20semi-freddo,%20minus%20the%20fruit%20salad%20(as%20we%20had%20planned%20a%20fruit%20salad%20to%20go%20with%20brunch%20already).%20The%20recipe%20was%20a%20bit%20labor-intensive%20and%20time-consuming,%20but%20the%20result%20was%20worth%20the%20effort.%20Smooth,%20tart,%20and%20creamy,%20this%20half-frozen%20custard-and-cream%20concoction%20ended%20up%20being%20the%20perfectly%20light%20ending%20to%20our%20meal.%20(Bonus%20%231%20-%20even%20after%20serving%20up%20four%20generous%20slices,%20we%20had%20some%20leftover%20for%20the%20following%20night!)%20(Bonus%20%232%20-%20we%20had%20all%20those%20egg%20whites%20leftover%20so%20we%20whipped%20up%20some%20meringue%20cookies%20with%20those%20-%20post%20and%20recipe%20forthcoming.)%3C/p%3E%3Cp%3EWith%20our%20guests%20arriving%20at%20noon,%20we%20spent%20the%20morning%20cleaning%20up%20and%20getting%20our%20mise%20en%20place%20together%20so%20we%20wouldn't%20be%20stuck%20in%20the%20kitchen%20all%20day.%20We%20split%20the%20bagels%20and%20put%20them%20in%20a%20basket,%20and%20we%20mixed%20up%20a%20fruit%20salad%20of%20cantaloupe,%20green%20grapes,%20sliced%20strawberries%20and%20star%20fruit%20(photo%20above).%20We%20cooked%20the%20slab%20bacon%20and%20sweet%20Italian%20sausage%20and%20put%20those%20in%20the%20oven%20on%20low%20to%20stay%20warm.%20We%20made%20individual%20potato%20gratins%20(in%20a%20muffin%20tin)%20and%20allowed%20those%20to%20cool%20a%20bit.%20Then%20we%20got%20our%20ingredients%20together%20for%20the%20frittata.%20By%20the%20time%20they%20arrived,%20the%20table%20was%20set,%20the%20wines%20were%20chilled%20and%20all%20we%20had%20to%20do%20was%20cook%20the%20frittata%20-%20everything%20else%20was%20set%20to%20go.%3C/p%3E%3Cp%3EEverything%20was%20delicious,%20especially%20accompanied%20by%20the%20%22flight%22%20of%20sparkling%20wines.%20The%20frittata%20was%20nice%20and%20fluffy,%20filled%20with%20fresh,%20light%20ingredients%20of%20chopped%20basil,%20shredded%20Italian%20cheeses,%20and%20halved%20grape%20tomatoes.%20The%20sausages%20were%20plump%20and%20moist,%20and%20the%20bacon%20was%20thick%20and%20crisp.%20But%20everyone's%20favorite%20item%20was%20the%20wonderfully%20rich%20individual-sized%20potato%20gratin%20(photo%20above,%20recipe%20below);%20we%20ate%20them%20all.%20The%20potatoes%20were%20bathed%20in%20cream%20and%20layered%20with%20Gruyere%20cheese%20which%20melted%20between%20the%20layers%20and%20oozed%20out%20to%20crisp%20up%20the%20sides%20and%20the%20top.%20Scrumptiously%20classic.%20Here's%20our%20recipe:%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%20Grease%20the%20cups%20of%20a%2012-muffin%20muffin%20tin.%20Layer%20each%20cup%20with%20slices%20of%20potato%20topped%20with%20salt,%20pepper%20and%20cheese.%20Continue%20to%20layer%20in%20this%20way%20until%20each%20muffin%20cup%20is%20full.%20Add%20two%20tablespoons%20of%20cream%20to%20each%20cup.%20Cover%20loosely%20with%20aluminum%20foil%20and%20bake%20for%2020%20minutes.%20Remove%20the%20foil%20and%20top%20each%20stack%20with%20the%20parmesan%20cheese,%20dividing%20evenly.%20Return%20to%20the%20oven%20and%20bake%20for%20an%20additional%2020%20minutes.%20Allow%20to%20cool%20before%20removing%20from%20pan.%3C/p%3E%3Cp%3EAnd%20by%20the%20way,%20their%20favorite%20%22sparkler%22%20happened%20to%20be%20our%20favorite,%20the%20real%20champagne,%20Veuve%20Clicquot.%20Lesson%20learned.%3C/p%3E){kind=link}
