Ingredientes
- 2 tablespoons coconut oil
- 1/2 medium red onion, diced
- 1 stalk of celery, diced
- 1 large carrot, peeled and diced
- 1 cup pancetta or thick-cut bacon, diced
- 1 tablespoon coconut flour
- 1 cup sweet potato, diced, about 1 medium
- 2 cups mushrooms, any variety, chopped (I used a variety of shiitake, bellas, and oyster mushrooms)
- 1 teaspoon sea salt
- 1/2 teaspoon ground pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons thyme leaves, plus extra for garnish
- 1 package, 17.6 ounces, of beef bone broth
- 1 cup of water
