- 6 tablespoons butter (ah, what the heck, just use the whole stick if you want)
- 2 tablespoons light olive oil
- 1 large shallot, finely minced
- 1 large clove garlic, crushed
- 1/4 teaspoon red pepper flakes
- 1 tablespoon fresh lemon juice
- 1/3 cup dry white wine
- Salt and pepper to taste
- 3/4 cup grated Parmesan cheese
