- 1/2 cup (1 stick) organic butter
- 3/4 cup brown sugar
- 1 large egg, lightly beaten (try to find pasture-raised from a farm near you)
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/2 tsp fine sea salt
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup chocolate chips
- 1/3 cup chopped pecans (sub in walnuts if you prefer them)
