.%20%20To%20mark%20the%20occasion%20(as%20who%20doesn't%20want%20to%20celebrate%20pie),%20I%20made%20Oatmeal%20Pie%20from%20p178%20of%20my%20new%20pie%20book,%20The%20Hoosier%20Mama%20Book%20of%20Pie%20by%20Paula%20Haney.%20%20Hoosier%20Mama%20is%20the%20name%20of%20a%20pie%20bakery%20in%20Chicago,%20and%20it%20is%20one%20the%20coolest%20names%20for%20a%20bakery%20that%20I%20have%20heard%20of.%3C/p%3E%3Cp%3EThere%20are%20heaps%20of%20terrific%20sounding%20pies%20in%20this%20book,%20although%20not%20many%20pictures.%20of%20the%20finished%20products%20%20I%20chose%20Oatmeal%20Pie%20on%20the%20criteria%20of%20(a)%20easy;%20(b)%20quick%20to%20make;%20and%20(c)%20I%20had%20all%20the%20ingredients%20in%20the%20house.%20%20This%20is%20what%20I%20need%20when%20I%20bake%20during%20the%20week%20after%20work.%3C/p%3E%3Cp%3EI%20liked%20their%20all%20butter%20crust%20recipe,%20which%20used%20red%20wine%20vinegar%20-%20I%20have%20never%20seen%20this%20done%20before.%20%20I%20will%20confess%20to%20having%20used%20white%20wine%20vinegar%20as%20I%20was%20out%20of%20red%20wine%20vinegar,%20and%20it%20didn't%20seem%20to%20have%20any%20ill%20effect%20on%20the%20dough.%20%20I%20also%20did%20not%20freeze%20any%20of%20the%20butter,%20as%20suggested%20in%20the%20recipe.%20%20This%20pie%20crust%20was%20easy%20to%20work%20with,%20which%20is%20a%20bonus%20in%20my%20books.%3C/p%3E%3Cp%3EThe%20filling%20is,%20as%20the%20author%20says,%20like%20pecan%20%20pie%20with%20oats%20instead%20of%20pecans.%20%20I%20ran%20out%20of%20maple%20syrup%20so%20used%20half%20and%20half%20maple%20syrup%20and%20honey.%20%20Again,%20the%20results%20did%20not%20seem%20to%20be%20affected%20by%20this.%3C/p%3E%3Cp%3EServed%20warm,%20this%20pie%20is%20incredibly%20sweet.%20%20I%20am%20looking%20forward%20to%20trying%20it%20cooled%20down%20to%20see%20if%20there%20is%20a%20marked%20difference%20in%20flavour%20and%20texture.%3C/p%3E%3Cp%3ETo%20make%20this%20pie,%20you%20will%20need:%3C/p%3E%3Cp%3EFor%20the%20pie%20shell:%3C/p%3E%3Cp%3E100g%20cold%20butter,%20cubed%3C/p%3E%3Cp%3E1/2%20tablespoon%20red%20wine%20vinegar%3C/p%3E%3Cp%3E1/4%20cup%20cold%20water%3C/p%3E%3Cp%3E165g%20plain%20flour%3C/p%3E%3Cp%3Epinch%20of%20salt%3C/p%3E%3Cp%3E1/4%20tablespoon%20sugar%3C/p%3E%3Cp%3EStir%20the%20vinegar%20into%20the%20water%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20whiz%20together%20the%20flour,%20salt%20and%20sugar.%20%20Add%20the%20butter%20and%20pulse%20until%20the%20mixture%20turns%20sandy.%20%20%20Add%20half%20the%20water%20mixture%20and%20pulse%20-%20if%20the%20mixture%20starts%20to%20clump%20together,%20it's%20ready,%20otherwise%20keep%20gradually%20adding%20the%20water%20mixture%20until%20the%20dough%20just%20clumps%20together.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20floured%20bench%20and%20knead%20gently%20until%20it%20just%20comes%20together,%20then%20flatten%20it%20into%20a%20disc%20and%20wrap%20in%20cling%20film%20for%20half%20an%20hour.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20200%20degrees%20Celsius.%20%20Remove%20the%20pie%20dough%20from%20the%20fridge%20and%20roll%20it%20out%20until%20it%20is%20around%205mm%20thick%20and%20it%20is%20big%20enough%20to%20cover%20the%20base%20and%20sides%20of%20a%209%22%20inch%20buttered%20pie%20dish.%20%20Blind%20bake%20the%20pie%20shell%20and%20allow%20to%20cool%20slightly.%3C/p%3E%3Cp%3EFor%20the%20filling:%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20180%20degrees%20Celsius.%3C/p%3E%3Cp%3EBeat%20the%20butter%20and%20sugar%20in%20a%20stand%20mixer%20until%20light%20and%20fluffy.%20%20Beat%20in%20the%20cinnamon,%20cloves%20and%20salt,%20followed%20by%20the%20maple%20syrup.%3C/p%3E%3Cp%3EBeat%20in%20the%20eggs,%20one%20at%20a%20time,%20then%20stir%20through%20the%20oats%20with%20a%20spoon.%3C/p%3E%3Cp%3EPour%20the%20filling%20into%20the%20blind%20baked%20pie%20shell,%20and%20bake%20in%20your%20preheated%20oven%20for%2045%20minutes%20to%20an%20hour,%20until%20the%20filling%20is%20completely%20set.%3C/p%3E%3Cp%3EServe%20with%20a%20splodge%20of%20your%20favourite%20icecream,%20or%20enjoy%20as%20is.%3C/p%3E){kind=link}
