Ingredients: 1 4/5 kg very ripe Comice or possibly William pears peeled and cored; 2 Tbsp. caster sugar; 2 x vanilla pods split lengthways; 150 ml grappa; 1 x juice of 2 lemons

Ingredientes

1Â 4/5 kg very ripe Comice or possibly William pears peeled and cored
2 Tbsp. caster sugar
2 x vanilla pods split lengthways
150 ml grappa
1 x juice of 2 lemons

Direcciones

Cook the pears in a pan with the sugar vanilla pod and 250ml water till soft.
Drain.
Add in the grappa and lemon juice.
Push through a very fine sieve then let cold.
Put into an ice cream machine and churn till frzn or possibly freeze in a suitable container
Serves 10
