Receta Pear and pecan spice muffins
Ingredientes
- 1/2 cup shelled pecans, ground into meal in a food processor
- 1 1/4 cups white whole wheat flour
- 2 tablespoons flax seed meal
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cardamom
- 1/2 cup packed light brown sugar
- 2 tablespoons coconut oil, melted
- 2 teaspoons vanilla
- 2/3 cup plain greek yogurt (I use Cabot Greek-Style Yogurt)
- 1 egg
- 1 1/2 cups finely diced pear (about 2 pears)
- 1/4 cup finely diced candied ginger
- coarse sugar for sprinkling (optional)
