%20MIA.%20%20So%20I%20made%20an%208-inch%20tart.%20%20I%20didn't%20downsize%20the%20filling,%20but%20did%20use%20only%203%20pears.%20%20It%20worked%20fine.%3C/p%3E%3Cp%3ENow,%20I%20have%20to%20admit%20something%20here.%20%20Everytime%20I've%20made%20this%20tart%20in%20the%20past,%20I've%20simmered%20the%20pears%20in%20MS'%20wine%20mixture.%20%20This%20time...%20I-I-I%20compromised...%20and%20used...%20dare%20I%20say%20it...%20canned%20pears...%20%20I%20would%20be%20totally%20ashamed%20of%20myself...%20except%20the%20tart%20turned%20out%20delicious!!%20%20*sigh*%20Good%20to%20know%20that%20if%20you%20don't%20have%20the%20time,%20or%20just%20don't%20want%20to%20mess%20with,%20peeling%20and%20coring%20and%20simmering%20pears,%20canned%20pears%20will%20work%20in%20a%20pinch.%20%20You%20learn%20something%20new%20everyday!!%3C/p%3E%3Cp%3EPear%20Frangipane%20Tart%3C/p%3E%3Cp%3EPreheat%20oven%20to%20425%20F.%3C/p%3E%3Cp%3ETo%20make%20the%20frangipane%20filling,%20cream%20the%20butter%20and%20sugar%20in%20the%20bowl%20of%20an%20electric%20mixer%20until%20light%20and%20fluffy.%20%20Add%20the%20egg,%20ground%20almonds,%20rum,%20almond%20extract,%20and%20flour,%20and%20beat%20until%20smooth.%20Spread%20the%20thick%20mixture%20evenly%20in%20the%20chilled%20tart%20shell%20and%20refrigerate%20it%20while%20you%20prepare%20the%20pears.%3C/p%3E%3Cp%3ERemove%20the%20cooled%20pears%20from%20the%20poaching%20liquid%20and%20cut%20each%20in%20half%20lengthwise;%20remove%20core%20and%20stem.%20%20Place%20each%20half,%20cut%20side%20down,%20on%20a%20cutting%20board%20and%20cut%20crosswise%20into%20thin%20slices.%20%20Arrange%20the%20sliced%20pear%20halves%20on%20the%20frangipane%20around%20the%20edge%20of%20the%20tart,%20leaving%20space%20between%20each%20half,%20and%20place%20one%20half%20in%20the%20center%20of%20the%20tart.%20%20When%20arranging%20the%20pears,%20try%20to%20fan%20the%20slices%20toward%20the%20center%20of%20the%20tart,%20which%20will%20elongate%20the%20pears%20somewhat.%20%20Bake%20for%2045%20minutes,%20or%20until%20the%20tart%20shell%20is%20golden%20brown%20and%20the%20frangipane%20has%20puffed%20and%20browned.%3C/p%3E%3Cp%3EWhile%20the%20tart%20is%20baking,%20bring%20the%20reserved%20poaching%20liquid%20to%20a%20boil%20and%20reduce%20by%20half.%20%20Brush%20this%20glaze%20lightly%20over%20the%20pears%20immediately%20upon%20removing%20the%20tart%20from%20the%20oven.%20%20Serve%20at%20room%20temperature.%3C/p%3E%3Cp%3EPate%20Brisee%3C/p%3E%3Cp%3EMakes%20two%208-%20to%2010-inch%20tarts%20or%20single-crust%20pies,%20one%208-%20to%2010-inch%20double-crust%20pie,%20or%20twelve%202-1/2-%20to%203-inch%20tartlets%3C/p%3E%3Cp%3E2-1/2%20cups%20all-purpose%20flour%3C/p%3E%3Cp%3E1%20teaspoon%20salt%3C/p%3E%3Cp%3E1%20teaspoon%20granulated%20sugar%20(optional)%3C/p%3E%3Cp%3E1%20cup%20cold,%20unsalted%20butter,%20cut%20into%20small%20pieces%3C/p%3E%3Cp%3E1/4%20to%201/2%20cup%20ice%20water%3C/p%3E%3Cp%3EPut%20the%20flour,%20salt,%20and%20sugar%20in%20the%20bowl%20of%20a%20food%20processor.%20%20All%20ingredients%20should%20be%20cold.%20%20Add%20the%20pieces%20of%20butter%20and%20process%20for%20approximately%2010%20seconds,%20or%20just%20until%20the%20mixture%20resembles%20coarse%20meal.%20%20(To%20mix%20by%20hand,%20combine%20the%20dry%20ingredients%20in%20a%20large%20mixing%20bowl.%20%20Using%20a%20pastry%20blender%20or%20two%20table%20knives,%20cut%20in%20the%20butter%20until%20the%20mixture%20resembles%20coarse%20meal.)%3C/p%3E%3Cp%3EAdd%20ice%20water,%20drop%20by%20drop,%20through%20the%20feed%20tube%20with%20the%20food%20processor%20running,%20just%20until%20the%20dough%20holds%20together%20without%20being%20wet%20or%20sticky;%20do%20not%20process%20more%20than%2030%20seconds.%20%20Test%20the%20dough%20by%20squeezing%20a%20small%20amount%20together.%20%20If%20it%20is%20crumbly,%20add%20a%20little%20more%20water.%3C/p%3E%3Cp%3ETurn%20dough%20out%20onto%20a%20lightly%20floured%20surface%20and%20form%20dough%20into%20a%20round%20disk.%20%20Wrap%20in%20plastic%20and%20chill%20for%20at%20least%20an%20hour.%3C/p%3E%3Cp%3EOn%20a%20lightly%20floured%20board,%20roll%20out%20the%20pastry%20to%20a%20thickness%20of%201/8%20inch.%20Place%20the%20pastry%20in%20the%20tart%20pan%20or%20pie%20plate,%20and%20press%20it%20into%20the%20bottom%20edges%20and%20along%20the%20sides%20without%20stretching%20the%20dough.%20%20After%20placing%20in%20tart%20pan,%20roll%20over%20the%20top%20of%20the%20pan%20with%20a%20rolling%20pin%20to%20cut%20off%20overhang%20of%20dough.%20%20If%20placing%20in%20pie%20pan,%20trim%20overhang%20with%20scissor%20or%20sharp%20knife,%20leaving%20about%20an%20inch%20to%20fold%20up%20and%20crimp%20around%20the%20edge%20of%20the%20pie%20plate.%20%20Chill%20the%20pastry-lined%20pan%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EWhite%20Wine%20Poached%20Pears%3C/p%3E%3Cp%3E1%20bottle%20of%20Champagne,%20sparkling%20white%20wine,%20or%20dry%20white%20wine%3C/p%3E%3Cp%3E2%20tablespoons%20freshly%20squeezed%20lemon%20juice%3C/p%3E%3Cp
