%20what%20was%20probably%20far%20too%20many%20new%20toys.%3C/p%3E%3Cp%3EAfter%20the%20frenzy%20subsided%20on%20Christmas%20morning%20and%20we'd%20put%20Will%20down%20for%20his%20nap,%20I%20found%20myself%20at%20loose%20ends.%20The%20week%20had%20been%20draining%20and%20very%20sad.%20I%20needed%20a%20break%20from%20thinking%20about%20how%20fragile,%20precious%20and%20fleeting%20life%20is%20for%20us%20all.%20My%20in-laws%20had%20been%20kind%20enough%20to%20share%20some%20of%20these%20gorgeous%20pears%20they'd%20received%20a%20few%20days%20earlier%20with%20us%20and%20I%20thought%20that%20I%20might%20find%20some%20peace%20in%20preserving%20them.%3C/p%3E%3Cp%3EAfter%20a%20quick%20search%20of%20my%20three%20favorite%20preserving%20blogs%20(What%20Julia%20Ate,%20Tigress%20In%20a%20Jam,%20and%20Food%20In%20Jars,%20in%20case%20you%20were%20wondering)%20for%20inspiration,%20I%20settled%20on%20a%20modified%20version%20of%20Julia's%20Ginger%20Pear%20Preserves%20-%20lured%20by%20the%20exotic%20sound%20of%20the%20ginger%20and%20the%20beautiful%20color%20of%20the%20jam.%20I%20consulted%20the%20Ball%20Complete%20Book%20of%20Home%20Preserving%20I%20bought%20this%20summer%20--%20such%20a%20great%20reference%20-%20it%20includes%20just%20about%20everything%20you%20could%20ever%20hope%20to%20can,%20bottle%20or%20freeze%20--%20and%20came%20up%20with%20the%20following%20lovely%20recipe.%3C/p%3E%3Cp%3EI%20put%20on%20an%20episode%20of%20Downton%20Abbey%20which%20is%20almost%20as%20good%20as%20Pride%20&%20Prejudice%20when%20I%20need%20soothing%20(season%202%20begins%20January%208th%20-%20hurray!)%20Then%20I%20spent%20a%20few%20moments%20admiring%20the%20simple%20beauty%20of%20the%20pears%20--%20I%20love%20their%20shape,%20their%20coloring,%20and%20their%20smell%20--and%20got%20to%20work%20coring,%20peeling%20and%20chopping%20until%20I%20had%20a%20big%20bowl%20of%20pears%20awaiting%20further%20orders.%3C/p%3E%3Cp%3EThen%20I%20zested%20and%20juiced%20this%20neat%20little%20row%20of%20citrus%20fruits%20that%20had%20been%20slowly%20desiccating%20on%20our%20counter.%20I%20was%20glad%20to%20find%20a%20good%20use%20for%20them%20before%20they%20passed%20the%20point%20of%20no%20return...%3C/p%3E%3Cp%3EAnd%20ground%20up%20a%20bunch%20of%20cardamom%20seeds%20with%20the%20mortar%20and%20pestle.%20I%20love%20the%20strong,%20aromatic%20smell%20of%20cardamom%20-%20it's%20so%20unique%20-%20a%20hint%20of%20eucalyptus%20and%20citrus%20and%20cloves%20and%20something%20else%20that%20defies%20description.%20They%20may%20be%20little%20but%20these%20seeds%20are%20mighty%20potent%20--%20if%20you%20don't%20store%20them%20carefully,%20your%20whole%20spice%20drawer%20will%20end%20up%20smelling%20like%20them.%3C/p%3E%3Cp%3EMeasured%20out%20sugar%20and%20vanilla%20extract,%20added%20the%20citrus%20zest%20and%20juice,%20sprinkled%20in%20some%20cinnamon%20and%20put%20it%20all%20up%20to%20simmer%20on%20the%20stove.%3C/p%3E%3Cp%3EOnce%20the%20pears%20had%20all%20softened,%20I%20used%20the%20immersion%20blenderto%20get%20rid%20of%20any%20lumps,%20leaving%20a%20smooth,%20sweet,%20spiced%20mixture%20behind.%3C/p%3E%3Cp%3EWhile%20I%20waited%20for%20the%20mixture%20to%20reduce%20enough%20to%20pass%20the%20sheet%20test,%20I%20put%20my%20canning%20pot%20on%20to%20boil%20and%20sterilized%20a%20bunch%20of%20pint%20and%20half-pint%20jars,%20lids%20and%20bands.%20I%20ladled%20the%20hot%20jam%20into%20the%20sterilized%20jars,%20applied%20the%20lids%20and%20screwed%20on%20the%20bands,%20boiled%20them%20for%2010%20minutes,%20and%20then%20set%20the%20jars%20out%20to%20cool%20overnight.%3C/p%3E%3Cp%3EIt's%20been%20a%20few%20years%20since%20I've%20created%20a%20label%20for%20any%20of%20my%20canned%20concoctions%20but%20I%20found%20time%20to%20whip%20up%20this%20little%20design%20during%20one%20of%20Will's%20naps%20last%20week.%20I%20knew%20I%20wanted%20to%20keep%20it%20simple%20so%20I%20drew%20the%20outline%20of%20a%20pear%20and%20wrote%20out%20the%20name%20of%20the%20preserve,%20then%20scanned%20both%20things%20and%20played%20around%20with%20them%20in%20Photoshop%20until%20they%20seemed%20to%20fit%20together.%3C/p%3E%3Cp%3EWishing%20you%20and%20yours%20a%20happy%20new%20year.%20May%20your%202012%20be%20as%20sweet%20and%20as%20spicy%20as%20these%20pear%20preserves.%20And%20don't%20forget%20to%20hug%20the%20people%20you%20love%20as%20often%20as%20you%20can.%20I%20promise%20you%20won't%20regret%20it.%3C/p%3E%3Cp%3EYields%20between%205-7%20half-pint%20jars%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Sterilize%20jars%20and%20lids%20in%20boiling%20water%20canner.%3C/p%3E%3Cp%3E2.%20Combine%20all%20the%20ingredients%20in%20a%20large%20saucepan%20and%20bring%20to%20a%20boil%20over%20medium%20heat,%20stirring%20to%20dissolve%20the%20sugar.%20Boil,%20stirring%20frequently,%20until%20the%20mixture%20thickens,%20about%2015%20minutes.%20Remove%20from%20heat%20and%20test%20to%20see%20if%20it%20has%20reached%20the%20gel%20stage.%20If%20the%20preserves%20fall%20from%20the%20spoon%20in%20a%20single%20sheet,%20it%20is%20at%20the%20gel%20stage.%20If%20your%20mixture%20has%20not%20reached%20the%20gel%20stage,%20return%20the%20pan%20to%20medium%20heat%20and%20cook,%20stirring%20constantly,%20for%20an%20additional%205%20minutes.%20Repeat%20gel%20stage%20test%20and%20cooking%20as%20needed.%3C/p%3E%3Cp%3E3.%20Ladle%20the%20hot%20preserves%20into%20hot%20jars%20leaving%201/4%20inch%20headspace.%20Remove%20any%20air%20bubbles.%20Wipe%20the%20rims.%20Center%20the%20lids%20on%20the%20jars.%20Apply%20bands%20until%20the%20fit%20is%20fingertip%20tight.%3C/p%3E%3Cp%3E4.%20Process%20the%20jars%20in%20a%20boiling%20water%20bath%20canner%20for%2010%20minutes,%20adjusting%20for%20altitude.%20Turn%20off%20the%20heat%20and%20let%20the%20jars%20sit%20for%205%20minutes%20then%20remove%20the%20jars%20and%20let%20cool%20in%20a%20draft-free%20spot%20overnight.%20Check%20the%20lids%20for%20seal%20after%2024%20hours%20-%20they%20should%20not%20flex%20up%20and%20down%20when%20the%20center%20is%20pressed.%20Store%20in%20a%20cool,%20dark%20place%20for%20up%20to%20one%20year.%3C/p%3E%3Cp%3EAlternatively,%20if%20you%20don't%20want%20to%20mess%20with%20the%20canning,%20you%20can%20skip%20the%20whole%20jar%20sterilizing%20and%20boiling%20water%20bath%20process%20and%20just%20store%20in%20clean,%20air-tight%20jars%20in%20the%20refrigerator%20for%20up%20to%20a%20month.%3C/p%3E){kind=link}
