Receta Poblano & Corn Baked Mac & Cheese
Ingredientes
- Any short cut pasta (like macaroni or penne) - 1lb. (I used penne rigate -- penne with lines)
- Corn - 3cups (fresh or frozen)
- Onion - 1 medium, chopped
- Salt - to taste
- For the Cream sauce:
- Butter - 2tbsp
- Olive Oil - 1tbsp
- All purpose flour - 2tbsp
- Milk - 1½cup (You can also use 1 cup milk and ½cup heavy cream)
- Cheese - 2cups shredded (I used a combination of sharp cheddar and pecorino cheese--original recipe had manchego cheese)
- For the Green Sauce:
- Poblano - 2 medium, deseeded and chopped
- Cilantro - ½cup
- Garlic - 2cloves
- Water or Vegetable Stock - 1cup
- Salt - to taste
