Ingredientes
- 3 Tablespoons egg replacer
- 5 Tablespoons Pom Wonderful! pomegranate juice
- 1 3/4 cups soy milk or So Delicious coconut milk
- 1/2 cup Pom Wonderful!, divided into 1/4 cups
- 1/2 cup Earth Balance
- 1 1/2 cups sugar
- 1 1/2 teaspoons rose water
- 2 1/2 cups unbleached all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- For the icing:
- 8 oz (1 tub) Tofutti vegan cream cheese
- 2 Teaspoons Pom Wonderful!
- 1-1 1/2 cups confectioners sugar
- 4 drops red food coloring (totally optional but gives it a lovely 'pom' color
- For the reduction:
- 1 8oz bottle of Pom Wonderful! pomegranate juice

%20to%20reductions,%20to%20cupcakes%20(see%20here!)%20to%20salad%20dressing%20and%20even%20a%20risotto.%3C/p%3E%3Cp%3EYes,%20all%20these%20recipes%20are%20sure%20to%20come.%20I%20will%20definitely%20not%20leave%20you%20hanging.%3C/p%3E%3Cp%3EPomegranate%20cupcakes%20equal%20just%20plain%20fun!%20They're%20a%20lovely%20light%20dessert%20with%20a%20hint%20of%20pomegranate%20that%20really%20kicks%20in%20the%20icing%20and%20reduction.%20Worth%20the%20time,%20as%20my%20guests%20informed%20me.%3C/p%3E%3Cp%3EThank%20you%20Pom%20Wonderful!%20and%20Mr.%20Good%20Looking%20Gladiator-ish%20Man%20for%20allowing%20me%20to%20try%20all%20sorts%20of%20random%20things%20with%20your%20wonderful%20elixir!!%3C/p%3E%3Cp%3EEditor's%20note:%20right%20about%20now%20we%20are%20getting%20ourselves%20acclimated%20to%20Italy,%20hence%20the%20lack%20of%20witty%20banter.%20I%20posted%20this%20early,%20right%20after%20spending%20like%20two%20weeks%20packing%20our%20entire%20family%20up%20I%20am%20at%20a%20loss%20for%20anything%20hilarious%20to%20say.%20I'll%20make%20up%20for%20it%20with%20great%20cupcakes%20and%20awesome%20posts%20(perhaps%20in%20Italian??)%20while%20we%20are%20in%20Italy!%3C/p%3E%3Cp%3EYield:%2024%20cupcakes%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EFor%20the%20cake:%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3ELine%20your%20cupcake%20pans%20with%20papers%20and%20preheat%20the%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl%20combine%20egg%20replacer%20and%205%20Tablespoons%20pomegranate%20juice%20and%20whip%20with%20a%20fork,%20by%20hand,%20vigorously%20until%20combined%20and%20smooth%20then%20set%20aside.%3C/p%3E%3Cp%3ETo%20your%20egg%20replacer%20mixture,%20add%20the%20milk%20and%201/4%20of%20the%20remaining%20pomegranate%20juice.%20Stir%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20Kitchenaid%20(or%20large%20bowl%20if%20doing%20it%20by%20hand)%20combine%20butter%20and%20sugar%20and%20whip%20until%20light%20and%20fluffy.%20Add%20rose%20water%20and%20the%20last%201/4%20cup%20pomegranate%20juice%20and%20continue%20to%20whip.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20combine%20the%20flour%20baking%20powder%20and%20salt%20and%20mix%20well.%3C/p%3E%3Cp%3EAdd%20flour%20mixture%20and%20egg%20replacer%20mixture%20to%20butter%20mixture%20and%20beat%20until%20just%20combined.%3C/p%3E%3Cp%3EFill%20cupcake%20tins%20to%20about%202/3%20full%20and%20bake%20in%20oven%20for%2020%20to%2025%20minutes.%20Start%20with%2020%20and%20work%20your%20way%20up.%3C/p%3E%3Cp%3EWhen%20done,%20remove%20and%20let%20cool%3C/p%3E%3Cp%3ETo%20make%20your%20icing,%20combine%20the%20Tofutti%20vegan%20cream%20cheese%20and%202%20teaspoons%20Pom%20Wonderful.%20Whip%20with%20a%20fork%20until%20combined%20then%20add%20confectioners%20sugar%201/2%20cup%20at%20a%20time.%20Stopping%20when%20it%20is%20just%20thick.%20Note:%20you%20can%20add%20more%20if%20you%20need%20to.%3C/p%3E%3Cp%3EPut%20icing%20in%20refrigerator%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EIn%20a%20small%20sauce%20pan,%20heat%20Pom%20Wonderful!%20juice%20on%20med/high%20until%20it%20comes%20to%20a%20boil.%20Reduce%20to%20med/high%20or%20right%20about%20where%20it%20is%20above%20a%20simmer%20and%20below%20a%20boil.%3C/p%3E%3Cp%3ELet%20juice%20sit%20on%20the%20stove%20and%20reduce,%20about%2020-30%20minutes.%20Watch%20to%20ensure%20the%20heat%20isn't%20too%20high...%20as%20it%20reduces%20you%20will%20need%20to%20reduce%20the%20heat.%3C/p%3E%3Cp%3EWhen%20reduction%20is%20fairly%20thick%20but%20not%20syrupy,%20turn%20off%20the%20heat%20and%20let%20it%20sit.%20It%20will%20continue%20to%20reduce%20as%20it%20cools.%20Plus,%20you%20don't%20want%20to%20put%20a%20warm%20reduction%20on%20the%20cupcakes.%3C/p%3E%3Cp%3ETo%20Ice:%3C/p%3E%3Cp%3EWhen%20cupcakes%20are%20cool,%20simply%20dip%20them%20into%20the%20cream%20cheese%20icing.%20You%20can%20also%20use%20an%20icing%20fork%20or%20regular%20fork%20if%20this%20is%20easier%20for%20you.%3C/p%3E%3Cp%3ERepeat%20for%20all%20cupcakes.%3C/p%3E%3Cp%3EWhen%20reduction%20is%20cool,%20use%20a%20spoon%20to%20drizzle%20reduction%20on%20top%20of%20iced%20cupcakes.%3C/p%3E%3Cp%3ENow%20they're%20ready%20to%20serve!%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EWith%20So%20Delicious%20ice%20cream%20or%20all%20by%20themselves...%20loved%20by%20kids%20and%20adults%20alike.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EPomegranate%3C/p%3E){kind=link}
