%20have%20the%20time%20to%20do%20a%20proper%20one%20on%20Sunday,%20and%20so%20.%20.%20.%20%20even%20though%20our%20anniversary%20was%20today,%20we%20had%20our%20celebration%20meal%20yesterday.%3C/p%3E%3Cp%3EWith%20the%20leftover%20sliced%20pork%20and%20gravy%20I%20made%20us%20a%20Pork%20and%20Apple%20Pie%20today%20.%20.%20.%3C/p%3E%3Cp%3EPork%20and%20apples%20go%20so%20very%20well%20together.%20We%20always%20eat%20pork%20with%20applesauce,%20so%20why%20not%20include%20apples%20in%20a%20pie???%20Why%20not,%20I%20say,%20why%20not!!%3C/p%3E%3Cp%3EI%20did.%3C/p%3E%3Cp%3EIt%20was%20deliciously%20scrumptious.%3C/p%3E%3Cp%3EOut%20of%20that%20pork%20shoulder%20roast%20I%20cooked%20on%20Saturday%20night,%20we%20got%20a%20celebratory%20roast%20dinner,%20plus%20the%20pork%20and%20apple%20pie%20tonight,%20and%20I'll%20probably%20do%20a%20hash%20of%20all%20of%20the%20leftover%20bits,%20plus%20the%20leftover%20potatoes%20and%20carrots%20and%20sprouts%20from%20the%20other%20night%20.%20.%20.%20that%20will%20be%20tomorrow%20night.%20%20And%20I%20know%20it%20will%20be%20tasty%20too.%3C/p%3E%3Cp%3EThis%20%20is%20thrift%20and%20economy%20at%20it's%20very%20best.%3C/p%3E%3Cp%3E*Pork%20and%20Apple%20Pie*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EThis%20is%20one%20of%20the%20favourite%20things%20I%20like%20to%20do%20with%20leftover%20Roast%20Pork.%20It's%20also%20perfect%20for%20this%20time%20of%20year%20because%20of%20all%20the%20apples%20we%20end%20up%20with,%20and%20that%20I%20need%20to%20get%20used%20up.%20Pork%20and%20apple%20are%20perfect%20partners!%3C/p%3E%3Cp%3ESummer%20Savoury%3C/p%3E%3Cp%3EShort%20crust%20pastry%20to%20cover%3C/p%3E%3Cp%3EPre-heat%20the%20oven%20to%20200*C?400*F.%20Lightly%20butter%20a%20shallow%20baking%20dish.%3C/p%3E%3Cp%3EPlace%20alternate%20layers%20of%20the%20pork%20and%20apple%20into%20the%20prepared%20baking%20dish,%20sprinkling%20each%20layer%20lightly%20with%20some%20salt,%20pepper%20and%20summer%20savoury.%20Pour%20the%20gravy%20over%20the%20top%20when%20done%20layering.%20Cover%20the%20top%20with%20pastry,%20crimping%20the%20edges%20around%20the%20dish.%20Prick%20or%20slash%20the%20top.%20Brush%20with%20a%20bit%20of%20beaten%20egg%20yolk%20if%20desired,%20and%20sprinkle%20with%20some%20sea%20salt%20and%20cracked%20black%20pepper.%20Bake%20for%20about%2015%20minutes,%20until%20the%20crust%20starts%20to%20brown.%20Reduce%20the%20heat%20to%20180*C/350*F%20and%20bake%20for%20another%20half%20hour,%20until%20the%20apples%20are%20soft%20and%20the%20filling%20is%20bubbling%20nicely%20away.%3C/p%3E%3Cp%3EI%20usually%20serve%20this%20with%20some%20extra%20gravy,%20peas%20and%20carrots,%20as%20well%20as%20some%20mash%20or%20chips%20on%20the%20side.%20It%20makes%20Todd%20a%20very%20happy%20camper,%20and%20when%20he's%20happy%20.%20.%20.%20I'm%20happy%20too!%3C/p%3E){kind=link}
