Receta Pork Pinwheels with Roasted Garlic Mayonnaise
These wonderful swirls of pork,parmesan cheese and walnuts make a wonderful summer dinner ,served with fried green tomatoes and delicious creamy mashed potatoes ,the whole family will love ,so step into my kitchen and sit a while .Enjoy!
Ingredientes
- Roasted Garlic Mayonnaise as Follows
- Preheat oven to 325 degrees
- cut top off 1 medium garlic head peel away skin
- place in baking dish drizzle with 2 tsps good olive oil
- cover and bake for about 60 minutes
- remove from oven cool and squeeze out to make a paste
- mash with a forkadd 1/2 cp mayo1 tsp cream salt and pepper
- chill at least 3 hours or more
- Pork PinWheels as follows
- 2 -12 oz pork Tenderloins
- 4 tbls olive oil
- 1/4 cup chopped walnuts
- 1/2 cup parmesan cheese
- 2 tbs fresh thyme
- 1 cup snipped fresh parsley
- 2tbls olive oil
- 1cup chopped leeks
- salt -pepper to taste
Direcciones
- Preheat oven to 325 ,in a medium skillet cook leeks in 2 tbls olive oil till soft
- remove from heat in a blender or food processor combine parsley ,thyme,cheese,salt pepper,blend with on off turns till till finely chopped,with the machine running add remaining oil gradually till the consistency of soft butter add leeks and nuts
- pulse until nuts are coarsely chopped
- Set aside
- using a sharp knife cut each Tenderloin lengthwise but not through
- cover tenderloin with plastic wrap and pound with the flat side af a meat mallet from the center to the edge into a 12by 8 inch rectangle remove wrap and repeat with remaining tenderloin
- Sprinkle tenderloins with salt and pepper
- Spread half of the parsley mixture evenly onto each tenderloin within 1 inch of edges
- Starting from the short side roll up each tenderloin into a spiral
- place tenderloins on a rack in a shallow roasting pan
- Roast uncovered 60 minutes remove from oven let roast rest 30 minutes ,Cover and chill for at least 3 hours or up to 8
- Slice and serve with Roasted Garlic Mayo ,Mashed potatoes and fried green tomatoes.,yummy
