.%3C/p%3E%3Cp%3EWell,%20the%20other%20day%20when%20I%20asked%20my%20peeps%20on%20facebook%20what%20they%20were%20having%20for%20dinner....someone%20piped%20up%20with%20%22Potato%20Soup!%22%20I%20love%20potato%20soup%20and%20haven't%20had%20it%20in%20a%20while.%20I%20thought%20how%20handy%20a%20potato%20ricer%20would%20be%20for%20that%20and%20next%20thing%20I%20knew%20I%20was%20out%20and%20buying%20a%20one.%20That%20very%20day!%3C/p%3E%3Cp%3ENext%20day...I%20find%20myself%20in%20my%20kitchen%20with%20Julia%20Child%20making%20Potage%20Celestine%20from%20Mastering%20the%20Art%20of%20French%20Cooking%20Volume%20Two.%20The%20ingredients%20are%20basic.%20The%20results%20are%20clean,%20fresh%20and%20more%20flavorful%20that%20I%20ever%20expected.%3C/p%3E%3Cp%3E(ok,%20there%20are%20a%20few%20more%20ingredients%20than%20shown%20in%20the%20picture,%20but%20these%20are%20the%20main%20ones)%3C/p%3E%3Cp%3EPotage%20Celestine%20(Celery%20Soup%20with%20Potatoes,%20Leeks,%20and%20Rice)%3C/p%3E%3Cp%3E6%20servings%3C/p%3E%3Cp%3EIn%20a%20large%20(3%20quart)%20saucepan,%20melt%203%20TB%20of%20butter%20over%20a%20medium%20low%20heat.%20Add%20the%20leeks%20and%20celery,%20cover%20and%20cook%20until%20tender%20but%20not%20browned.%20This%20should%20take%20about%2010%20minutes.%20Add%20the%20stock%20and%20bring%20to%20a%20boil.%20Stir%20in%20the%20rice%20and%20simmer%20for%20about%2025%20minutes,%20uncovered.%3C/p%3E%3Cp%3EIn%20another%20large%20saucepan%20or%20pot,%20(at%20least%203%20quarts%20but%20larger%20would%20be%20better),%20boil%20the%20potatoes%20with%202%20cups%20of%20water%20and%201/2%20tsp%20of%20salt.%20Once%20the%20potatoes%20are%20tender,%20drain%20the%20water%20into%20the%20pan%20with%20the%20celery%20and%20leeks.%3C/p%3E%3Cp%3EWith%20a%20handy%20dandy%20potato%20ricer,%20puree%20the%20potatoes%20back%20into%20their%20cooking%20pot.%3C/p%3E%3Cp%3EAdd%20the%20milk%20and%20whip%20with%20a%20wire%20wisk%20until%20smooth%20(takes%20seconds).%3C/p%3E%3Cp%3EIf%20you%20don't%20have%20a%20potato%20ricer....it's%20ok.%20No%20one%20will%20hold%20it%20against%20you.%20I%20swear.%20Just%20put%20the%20potatoes%20and%201%20cup%20of%20the%20milk%20into%20a%20blender%20and%20puree%20away.%20Pour%20back%20into%20the%20pot%20and%20beat%20in%20the%20remaining%20milk.%20See?%20No%20worries.%3C/p%3E%3Cp%3EWe're%20almost%20done.%3C/p%3E%3Cp%3EAdd%20the%20celery%20and%20leeks%20into%20the%20whipped%20potato%20pot%20and%20if%20you%20have%20an%20immersion%20blender,%20puree%20it%20all%20together%3C/p%3E%3Cp%3ENo%20immersion%20blender%20either?%20Put%20it%20back%20into%20your%20blender,%20in%20batches%20and%20puree%20it%20all.%3C/p%3E%3Cp%3EBeat%20in%20the%20sugar%20and%20season%20with%20salt%20and%20white%20pepper%20to%20taste.%3C/p%3E%3Cp%3EAs%20is....it%20tastes%20amazing!%3C/p%3E%3Cp%3ENow,%20for%20a%20little%20added%20amazingness.....check%20this%20out...%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20mash%204%20-%206%20TB%20of%20softened%20butter%20and%203%20TB%20of%20your%20choice%20of%20a%20fresh%20herb%20together.%3C/p%3E%3Cp%3EDivide%20the%20butter%20/%20herb%20mixture%20between%20the%20serving%20bowls,%20blend%20the%20servings%20of%20hot%20soup%20into%20the%20bowls%20with%20the%20butter%20/%20herb%20mixture,%20top%20with%20croutons%20and%20maybe%20a%20little%20extra%20minced%20herbs%20and%20serve.%3C/p%3E%3Cp%3EFor%20the%20croutons,%20I%20used%20some%20sourdough%20bread,%20cut%20into%20little%201/4%22%20or%20so%20cubes,%20dried%20in%20a%20warm%20oven%20(325'%20F)%20for%20about%2015%20minutes.%20Then%20sauteed%20them%20in%20clarified%20butter%20until%20golden%20brown.%3C/p%3E%3Cp%3EThe%20results%20of%20this%20soup?%20Amazing!%20Simple%20flavors%20blended%20together%20to%20make%20a%20deliciously%20clean%20soup.%20I%20do%20believe%20this%20is%20now%20one%20of%20my%20favorite%20soups.%20Ever!%3C/p%3E){kind=link}
