%20Half%20of%20the%20bag%20we%20used%20simply%20steamed%20.%20.%20.%20oh%20but%20they%20were%20lovely%20with%20a%20bit%20of%20melted%20butter%20and%20mint%20.%20.%20.%20they%20had%20a%20slightly%20waxy%20texture%20(great%20for%20salads)%20and%20a%20buttery%20almost%20chestnut%20flavour.%20Mmmmmm%20.%20.%20.%3C/p%3E%3Cp%3EThe%20rest%20I%20used%20to%20make%20a%20potato%20salad%20yesterday.%20I%20do%20so%20love%20a%20nice%20potato%20salad%20in%20the%20summer%20time.%20I%20am%20not%20fussy%20about%20mayonnaisy%20ones%20.%20.%20.%20not%20unless%20it's%20my%20mom's.%20She%20makes%20the%20best%20potato%20salad,%20with%20a%20mayonnaise%20base.%20I%20like%20it%20because%20it's%20not%20swimming%20in%20mayo.%20I%20am%20not%20fond%20of%20potato%20salad,%20swimming%20in%20mayo.%20Ugh%20.%20.%20.%3C/p%3E%3Cp%3EI%20chose%20to%20make%20a%20delicious%20vinaigrette%20dressing%20for%20my%20salad%20this%20time%20.%20.%20.%20flavoured%20with%20some%20sherry%20vinegar%20and%20Dijon%20mustard%20.%20.%20.%20some%20shallot%20and%20spring%20onion,%20and%20of%20course%20seasalt%20and%20black%20pepper.%3C/p%3E%3Cp%3EI%20cut%20up%20the%20potatoes%20and%20dropped%20them%20into%20the%20vinaigrette%20while%20they%20were%20still%20warm.%20That%20way%20the%20potato%20is%20able%20to%20absorb%20some%20of%20that%20lovely%20flavour%20from%20the%20dressing%20.%20.%20.%20just%20the%20way%20I%20like%20it.%3C/p%3E%3Cp%3EI%20then%20added%20some%20pancetta%20lardons,%20which%20I%20had%20cooked%20until%20crisp%20.%20.%20.%20and%20some%20crumbled%20blue%20cheese.%20Oh%20my%20.%20.%20.%20to%20die%20for.%3C/p%3E%3Cp%3EI%20garnished%20with%20some%20additional%20spring%20onion,%20blue%20cheese%20and%20I%20added%20a%20bit%20of%20the%20packaged%20bacon%20bits%20.%20.%20.%20but%20I%20should%20have%20actually%20saved%20out%20some%20of%20the%20pancetta%20lardons%20to%20use%20instead%20of%20the%20packaged%20ones,%20as%20the%20packaged%20bits%20looked%20a%20bit%20too%20pink.%20Thank%20goodness%20it%20was%20just%20for%20us!%3C/p%3E%3Cp%3EOh%20well%20.%20.%20.%20live%20and%20learn.%20I%20do%20hope%20you'll%20try%20this%20recipe%20out.%20Pink%20bacon%20bits%20aside%20.%20.%20.%20it%20was%20really%20quite,%20quite%20delicious!%20Oh%20how,%20I%20do%20so%20love%20Potato%20Salad!!%3C/p%3E%3Cp%3E*Potato%20Salad%20with%20Blue%20Cheese%20and%20Bacon*%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EI%20love%20a%20potato%20salad%20with%20a%20vinaigrette%20dressing%20far%20more%20than%20a%20mayonnaise%20based%20one.%20They%20just%20taste%20lighter%20somehow.%20This%20one%20is%20fab%20with%20the%20addition%20of%20a%20snappy%20dressing%20and%20so%20blue%20cheese%20and%20bacon%20lardons!%3C/p%3E%3Cp%3EPut%20the%20potatoes%20into%20a%20pot%20of%20lightly%20salted%20boiling%20water.%20Bring%20back%20to%20the%20boil,%20then%20turn%20the%20heat%20down%20a%20bit%20and%20simmer%20rapidly%20for%2010%20to%2015%20minutes%20until%20tender.%20Drain%20well.%3C/p%3E%3Cp%3EWhisk%20together%20the%20vinegar,%20oil,%20shallots%20and%20mustard%20for%20the%20dressing.%20Cut%20the%20potatoes%20into%20quarters%20while%20they%20are%20still%20warm%20and%20drop%20them%20into%20the%20dressing.%20Allow%20them%20to%20cool%20to%20room%20temperature%20in%20the%20dressing.%20Add%20the%20chopped%20spring%20onions,%20pancetta%20and%20crumbled%20blue%20cheese.%20Toss%20lightly%20to%20mix%20all%20together.%20Serve%20at%20room%20temperature.%3C/p%3E%3Cp%3ENote:%20If%20you%20like%20you%20can%20reserve%20some%20of%20the%20bacon,%20spring%20onions%20and%20cheese%20to%20sprinkle%20on%20the%20top%20of%20the%20salad%20in%20the%20bowl%20for%20a%20pretty%20garnish.%3C/p%3E){kind=link}
