- I've been eyeing these little devils for weeks, all the while buying pretzel buns at Trader Joe's. Want to see how I made them? Here you go:
- 1 3/4 cups milk, warmed to 110 degrees F. (bathwater warm)
- 2 tablespoons olive oil
- 2 teaspoons active dry yeast
- 3-3 1/2 cups bread flour
- 1 teaspoon salt
- Coarse salt for sprinkling
- Water Bath
- 7-8 cups water
- 1 tablespoon salt
- 4 tablespoons baking soda

.%20Add%20three%20cups%20of%20the%20flour%20and%20the%20salt.%3C/p%3E%3Cp%3EAttach%20the%20dough%20hook%20and%20knead%20the%20dough%20for%20about%205%20minutes,%20adding%20additional%20flour,%20if%20needed.%20The%20dough%20should%20nearly%20clean%20the%20sides%20of%20the%20bowl,%20but%20still%20be%20a%20little%20tacky.%20Remove%20the%20dough%20from%20the%20bowl%20and%20place%20on%20a%20lightly%20floured%20surface.%20Knead%20lightly,%20by%20hand,%20for%20about%20a%20minute%20until%20the%20dough%20is%20smooth%20and%20elastic.%3C/p%3E%3Cp%3EWhen%20measuring%20the%20flour,%20lightly%20spoon%20it%20into%20the%20measuring%20cup%20and%20level%20it%20off%20with%20a%20knife.%20If%20you%20have%20to%20add%20flour,%20add%20it%20a%20tablespoon%20at%20a%20time.%3C/p%3E%3Cp%3EPlace%20the%20dough%20in%20a%20well%20oiled%20bowl%20and%20turn%20it%20over%20so%20that%20both%20sides%20are%20oiled.%20Cover%20the%20bowl%20with%20a%20clean%20towel%20and%20let%20the%20dough%20rise%20in%20a%20draft-free%20area%20until%20it's%20doubled,%20about%2045%20minutes.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20400%20degrees%20F.;%20Line%20a%20baking%20sheet%20with%20parchment%20paper%20or%20a%20silicone%20baking%20mat.%3C/p%3E%3Cp%3EPunch%20the%20dough%20down%20and%20plop%20it%20on%20a%20floured%20surface%20(%20I%20prefer%20my%20Silpat),%20then%20divide%20it%20into%208%20pieces.%20Form%20each%20piece%20of%20dough%20into%20a%20ball,%20slightly%20flattened.%20Place%20the%20dough%20balls%20on%20the%20lined%20baking%20pan,%20cover%20and%20allow%20to%20rise%20for%20an%20additional%2020%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20buns%20are%20rising,%20prepare%20the%20water%20bath.%20In%20a%20large%20pot,%20combine%20the%20water,%20salt,%20and%20baking%20soda;%20bring%20to%20a%20rolling%20boil.%20Gently%20drop%20the%20dough%20buns%20into%20the%20boiling%20water,%20two%20at%20a%20time,%20and%20let%20them%20%22poach%22%20for%20about%2030%20seconds%20on%20each%20side.%20Remove%20them%20with%20a%20slotted%20spoon%20and%20place%20them%20back%20on%20the%20lined%20baking%20pan.%20Using%20a%20serrated%20knife,%20cut%202-3%20lines%20across%20each%20bun%20and%20sprinkle%20with%20course%20salt.%20Bake%20for%2025%20to%2030%20minutes,%20or%20until%20the%20buns%20are%20a%20deep%20brown.%20Transfer%20to%20a%20rack%20to%20cool.%3C/p%3E%3Cp%3EI%20found%20the%20dough%20balls%20to%20be%20a%20little%20sticky%20when%20I%20was%20putting%20them%20into%20the%20boiling%20water,%20so%20I%20dipped%20my%20fingers%20in%20a%20little%20flour%20first.%20The%20water%20does%20foam%20up,%20so%20make%20sure%20your%20pot%20is%20large%20enough.%20A%20crinkly%20appearance%20is%20normal--this%20disappears%20during%20baking.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20I%20was%20a%20little%20stingy%20with%20the%20salt--I%20usually%20scrape%20salt%20off%20of%20my%20pretzels,%20but%20I%20found%20that%20I%20did%20like%20a%20little%20on%20these.%3C/p%3E%3Cp%3EIf%20you%20aren't%20going%20to%20use%20all%20of%20these%20right%20away,%20go%20ahead%20and%20pop%20some%20in%20the%20freezer.%20They%20thaw%20quickly%20and%20stay%20fresh%20much%20longer%20if%20frozen.%3C/p%3E%3Cp%3EI%20may%20never%20buy%20another%20hamburger%20bun%20again.%3C/p%3E){kind=link}
