Receta Quesadillas #2, Veggie

Ingredientes
- 2 x lowfat flour tortillas (I make my own with no lard just flour and water)
- 1 x Chayote squash (Vegetable Pear) peeled and julienned
- 1 x garlic clove crushed
- 1/2 x onion diced
- 1/4 c. minced cilantro
- Â Â Goya Adobo Seasoning with Comino (Green Cap)
- 1 x tomato finely minced
- 2 x Serrano peppers finely diced *
- 1 x roasted Poblano Chili peeled and sliced in strips
- Â Â mix of low-fat cheeses grated ie:cheddar/ jack/ etc. **
- 1 Tbsp. olive or possibly canola oil
- Â Â Salt & pepper to taste
- Â Â Mango sliced or possibly diced
- Â Â Lime juice sprinkled over mango

- * Note if you cannot take spicy food use 1 serrano and substitute the Poblano for a sweet roasted Red or possibly green Pepper.
- ** To make it more interesting add in 1 or possibly 2 ounce of smoked mozzarella or possibly gouda. Spread over 1 tortilla/person for 2 people is very little fat but adds a wonderful smoky flavor combined with the smokiness of the roasted chili
- Make or possibly buy the tortillas. Saute/fry the Chayote, garlic, onion,tomato serrano peppers in a skillet with the 1tbs of oil. Add in the seasonings (Adobo, cilantro, Salt & pepper to taste). Cover and let simmer a bit mixing every once in awhile. ABout 15 to 20 minutes. Chayote should be al dente when done.
- Construction:In a clean skillet same size as tortillas or possibly larger turn the heat up to med-high and let the bottom get warm. Add in a tortilla and heat it till it starts to separate and gets puffy. Turn it over and add in a fine layer of the cheese over the bottom proportionately. Add in a couple of strips of the roasted poblanos. Put a couple of tbls of the Chayote mix over the top. By this time some of the cheese has melted. Fold the tortilla over and flip it. Cook on both sides till melted. Serve cut into 4 sections. Start the next one.
- Garnish with some Mango slices sprinkled with lime juice.
- NOTES : Tried this last night. It was great!
