%20only%20eat%20one%20spoonful%20of%20it!%20To%20be%20fair%20it%E2%80%99s%20quite%20good%20stuff,%20it%E2%80%99s%20just%20really%20really%20sweet.%20The%20best%20way%20to%20enjoy%20it%20is%20with%20Greek%20yogurt,%20because%20that%20counteracts%20the%20sweetness%20perfectly%20and%20prevents%20the%20sugar%20comma%20you%20might%20fall%20into%20if%20not%20careful.%20There%20are%20many%20different%20types%20of%20spoon%20sweet%20like%20cherry,%20pear,%20apple,%20orange,%20grape,%20apricot,%20plum,%20and%20some%20weirder%20ones%20like%20carrot,%20courgette%20(zucchini)%20and%20baby%20aubergine%20(eggplant).%20And%20of%20course%20quince,%20which%20is%20probably%20one%20of%20the%20nicest.%3C/p%3E%3Cp%3EAnyway.%20Since%20I%E2%80%99m%20supposed%20to%20be%20writing%20about%20chutney,%20I%E2%80%99ll%20stop%20going%20on%20about%20sweets!%20So.%20Quince%20chutney%20was%20one%20of%20the%20three%20recipes%20in%20that%20article.%20It%20immediately%20grabbed%20my%20attention,%20and%20stayed%20in%20my%20mind%20till%20a%20few%20days%20ago%20when%20I%20saw%20a%20crateful%20of%20the%20strange%20looking%20things%20in%20my%20local%20supermarket.%20They%20look%20like%20a%20cross%20between%20pears%20and%20apples!%20But%20they%20are%20tough%20little%20cookies%20to%20deal%20with.%20The%20flesh%20is%20very%20hard%20and%20they%E2%80%99re%20quite%20difficult%20to%20peel%20because%20of%20the%20many%20bumps%20and%20grooves.%20I%E2%80%99d%20recently%20seen%20this%20video%20on%20Food52%20about%20peeling%20apples%20and%20thankfully%20remembered%20it,%20so%20I%20tried%20out%20the%20technique%20and%20it%20worked%20a%20treat.%20Quince%20may%20be%20very%20hard%20when%20raw%20(and%20definitely%20inedible)%20but%20it%20softens%20very%20quickly%20during%20cooking.%20And%20it%20must%20also%20absorb%20liquid%20as%20this%20thickened%20very%20quickly%20too.%20So%20make%20sure%20you%20cover%20the%20pan%20and%20turn%20the%20heat%20right%20down,%20so%20the%20flavours%20have%20enough%20time%20to%20mingle%20before%20it%E2%80%99s%20ready.%3C/p%3E%3Cp%3EThis%20is%20gorgeous%20with%20cheese.%20Try%20it%20with%20a%20fairly%20strong%20tasting%20variety%20as%20it%E2%80%99s%20very%20flavourful%20and%20the%20quince%20chunks%20are%20quite%20sweet.%20A%20mature%20cheddar%20or%20even%20smoked%20cheese%20would%20work%20fantastically.%20It%E2%80%99s%20also%20a%20good%20accompaniment%20to%20pork%20or%20cold%20deli%20meats.%20Like%20all%20chutneys%20it%20gets%20better%20with%20age,%20so%20let%20it%20rest%20for%20at%20least%20a%20few%20days%20before%20digging%20in.%3C/p%3E%3Cp%3ERecipe%20by%20Thalia%20Tsichlaki%20in%20the%20magazine%20BHMAgazino,%20November%202009.%3C/p%3E%3Cp%3EQuince%20Chutney%3C/p%3E%3Cp%3EMakes%20about%202-3%20medium%20jars%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EFill%20a%20large%20bowl%20with%20water%20and%20add%20the%20lemon%20juice.%3C/p%3E%3Cp%3EPeel%20the%20quinces,%20cut%20into%20chunks%20and%20put%20them%20in%20the%20bowl%20with%20the%20lemon%20water%20(to%20keep%20them%20from%20browning%20%E2%80%93%20they%20brown%20very%20quickly).%20Leave%20for%2010%20minutes.%3C/p%3E%3Cp%3EIn%20the%20meantime,%20heat%20the%20oil%20in%20a%20saucepan%20over%20medium%20heat%20and%20gently%20cook%20the%20onion%20until%20soft%20and%20translucent.%3C/p%3E%3Cp%3EAdd%20the%20quinces,%20raisins,%20cranberries,%20cinnamon,%20vinegar%20and%20ginger.%20Sprinkle%20the%20sugar%20over%20the%20top.%20Mix%20gently%20and%20let%20it%20cook,%20covered,%20over%20very%20low%20heat%20for%20about%2030%20minutes.%20If%20you%20can,%20leave%20it%20longer,%20but%20be%20careful%20that%20the%20liquids%20aren%E2%80%99t%20all%20absorbed%20too%20quickly.%3C/p%3E%3Cp%3EAdd%20salt%20and%20pepper%20(the%20recipe%20mentions%20adding%20this%20now.%20To%20be%20honest%20I%20think%20I%20completely%20forgot%20this%20stage,%20so%20I%20don%E2%80%99t%20know%20if%20it%20would%20be%20better%20added%20at%20the%20beginning%20with%20the%20rest%20of%20the%20ingredients.%20I%20also%20can%E2%80%99t%20say%20how%20much.%20I%20do%20know%20that%20none%20is%20fine,%20you%20can%20always%20season%20when%20serving!)%3C/p%3E%3Cp%3EPut%20into%20warm%20sterilized%20jars%20and%20leave%20to%20cool%20completely%20before%20placing%20in%20the%20fridge.%3C/p%3E%3Cp%3EOther%20interesting%20chutneys%20from%20around%20the%20web:%3C/p%3E%3Cp%3EFig%20Chutney%20by%20David%20Lebovitz%3C/p%3E%3Cp%3ETomato%20Chutney%20by%20Liz%20the%20Chef%3C/p%3E%3Cp%3EApple%20Cranberry%20Chutney%20by%20Simply%20Recipes%3C/p%3E%3Cp%3ECurried%20Apple%20Chutney%20by%20Local%20Kitchen%3C/p%3E%3Cp%3EGreen%20Bean%20Chutney%20by%20Chutney%20and%20Spice%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
