Quinoa Stuffed Bell Peppers are packed with protein and the flavours of crab, spinach and goat cheese. Perfect, tasty one dish dinner. Great meatless alternative.

Direcciones

  1. Pre-cook your quinoa
  2. Preheat the oven to 400º F
  3. Place the peppers in a prepared casserole dish
  4. Drain the canned crab meat
  5. In a bowl add the quinoa, crab, seasonings, goat cheese and mix well to combine
  6. Add in 2 oz. of the chopped spinach and mix to combine
  7. Stuff the peppers with the mixture
  8. In a bowl combine the panko crumbs and olive oil till the crumbs are well coated
  9. Sprinkle over each pepper
  10. Cover with foil and bake for 25 minutes
  11. Remove foil and continue to bake for another 10 minutes, or until the peppers are cooked to your desired level of firmness
  12. Place the rest of the chopped spinach on a serving platter
  13. Place the cooked peppers on top
  14. Garnish with parsley and lemon wedges
  15. Enjoy!!
