I love recipes that use ingredients that I always have on hand. This is one and as far as muffins go it’s about as moist as you can make!

  1. Combine cereal, milk and cranberries. Mash a little and let stand 10 minutes.
  2. In a separate bowl mix flour, baking soda, cinnamon and salt.
  3. Add egg, oil, applesauce and sugar to the cereal mixture. Stir well.
  4. Add flour mixture to cereal mixture. Stir well.
  5. Line a muffin pan with 12 wrappers and fill each to top with batter.
  6. Bake at 400 degrees for 22 minutes.
