%20I%20made%20it%20was%20winter%20of%202007.%20%20There%20was%20a%20recipe%20in%20this%20cookbook%20Alex%20bought%20me%20and%20all%20we%20had%20was%20a%20roasting%20pan%20to%20make%20shortbread%20in.%20%20Alas%20-%20it%20didn't%20work.%20%20Even%20though%20I%20should%20have%20realized%20roasting%20pan%20does%20NOT%20equal%20good%20shortbread%20-%20I%20was%20afraid%20of%20making%20it%20again.%20%20Also,%20now%20that%20I%20have%20a%20food%20processor%20shortbread%20is%20a%20lot%20easier%20to%20make.%3C/p%3E%3Cp%3EI%20cooked%20the%20shortbread%20for%20a%20little%20bit%20shorter%20than%20the%20recommended%20cooking%20time%20because%20I%20was%20soo%20afraid%20of%20them%20burning%20(ironically,%20a%20few%20of%20them%20still%20did)...%20but%20dear%20god,%20are%20these%20cookies%20good.%20%20The%20buttery%20texture%20of%20the%20shortbread%20with%20the%20crunch%20of%20the%20white%20chocolate...%20Mmm.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20325%20degrees%20F.%20In%20a%20food%20processor,%20combine%20flour,%20sugar,%20cocoa%20powder,%20and%20salt.%20Cover%20and%20process%20with%20on/off%20turns%20until%20combined.%20Add%20butter%20and%20red%20food%20coloring.%20Process%20with%20on/off%20turns%20until%20mixture%20resembles%20fine%20crumbs.%20Then%20continue%20to%20process%20until%20mixture%20begins%20to%20clump%20together.%3C/p%3E%3Cp%3EScoop%20dough%20onto%20a%20lightly%20floured%20surface%20and%20knead%20lightly%20until%20nearly%20smooth.%20Roll%20or%20pat%20dough%20to%20a%201/2-inch%20thickness.%20Using%20a%20floured%201-1/2-inch%20round%20cutter,%20cut%20out%20dough.%20Place%20cutouts%201%20inch%20apart%20on%20an%20ungreased%20cookie%20sheet.%20Press%20scraps%20together%20and%20reroll.%3C/p%3E%3Cp%3EBake%20in%20the%20preheated%20oven%20for%2020%20to%2025%20minutes%20or%20until%20centers%20are%20set.%20Transfer%20cookies%20to%20a%20wire%20rack;%20let%20cool.%3C/p%3E%3Cp%3EIn%20a%20heavy%20small%20saucepan,%20melt%20white%20chocolate%20and%20shortening%20over%20low%20heat,%20stirring%20constantly.%20Place%20cookie%20in%20chocolate%20with%20fork,%20flip%20over,%20and%20remove%20with%20a%20fork%20and%20tap%20off%20excess%20on%20the%20side%20of%20the%20bowl.%20If%20desired,%20sprinkle%20with%20festive%20sprinkles,%20nonpareils%20or%20chopped%20pistachios.%20Let%20stand%20on%20waxed%20paper%20until%20set.%3C/p%3E){kind=link}
