Receta Refrigerated Bran Muffins

Ingredientes
- 2 c. buttermilk
- 1/2 c. oil
- 2 large eggs, beaten
- 2 c. bran flakes
- 2 1/2 c. flour
- 1 1/2 c. sugar
- 2 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 c. minced and lightly floured dates
- 1/2 c. minced nuts
- 1 c. raisins
Direcciones
- In large bowl, put together first 3 ingredients and beat till well blended. Add in rest of ingredients and stir till just moistened. Lightly spoon flour into measuring cup and level off. Put 1/4 cup flour aside to coat raisins and dates before adding to mix. Fill muffin cups 3/4 full. Bake at 400 degrees for 15-20 min. Yields 2 dozen. Dough maybe mixed, covered and refrigerated for up to 6 weeks and bake as directed.
