This is a great recipe for hot summers. A very light dish if you just want to try it alone.

  • 1 cup diced red onions
  • 3 tbsp melte butter
  • 1 1/2 cups halved red grapes (seedless)
  • 1/2 cup sweetened dried cranberries
  • 2 tsbp white or regular balsaic vinegar
  • 2 (8.5oz) pouches ready to serve basmasti rice
  • 3/4 cup chopped toasted pecans
  • 1/2 cup chopped fresh parsley
  • 1/2 tsp salt

  1. saute red onion in melted butter in a large skillet over medium - high heat until tender
  2. stir in grapes, crandberries, and balsamic vinegar
  3. stir in basmati rice, toasted pecans, parsley, and salt
  4. stirring often not to stick and thoroughtly heated
